Roasted Garlic, Spinach & Bacon Rangoon

With the holidays around the corner, appetizers are a much needed item at any get together, so why not spend a little extra time and make some delicious homemade ones? Better yet, get some friends together, make a large batch, have some drinks and have yourself an appie making party! As part of our holiday inspired cooking segment on CTV Morning Live – Saskatoon, tomorrow morning (December 18th – 8:30AM), I tossed around a few different ideas, but ultimately decided on creating these Roasted Garlic, Spinach & Bacon Rangoon appetizers, and boy am I glad I did! The Loaded Nacho “Game Day” Grilled Cheese

Initially, when asked to do a cooking segment on CTV Morning Live we were going to do something holiday inspired (those recipes will be coming in the near future!). But when they mentioned doing something Grey Cup inspired, I thought PERFECT I can make an epic grilled cheese inspired by one of the many game day appies people love! Well what goes hand in hand with cheese other than a grilled cheese? Nachos of course! So I present the Doritos encrusted Loaded Nacho “Game Day” Grilled Cheese! It’s a wild one so get ready!

Pepperoni Stuffed Mozzarella Sticks

After making “The Canadian”, I had an abundance of pepperoni and mozzarella cheese leftover. In my efforts to use the rest of it, I had a stroke of genius, creating Pepperoni Stuffed Mozzarella Sticks! Having never made homemade mozzarella sticks, I thought stuffing pepperoni in them might not be the smartest move, but screw it! I did it anyways! While the process of making them was a little tedious, the end result was delicious! Here’s how it went down!

Roasted Corn Guacamole

After working way too many hours this week, I’m finally getting some well deserved R & R this long weekend, at my girlfriends family’s gorgeous cabin in Columbia Lake, BC. Being so busy at work, I’ve been neglecting my blogging duties, and relaxing at a cabin goes hand in hand with having plenty to eat and drink, which just so happens to go hand in hand with a little blogging!

Not a bad view!

After a friendly neighbour brought over some delicious Taber corn (adding to the already abundant supply on hand), a corn related recipe was definitely in order! Having seen several variations of corn salsa online and in magazines, I decided it was time to whip up my own!

Scallops Gratinee (with Wine, Garlic, and Herbs) | JC100 – Week 14

I must admit, I was expecting this weeks recipe to be the popular boeuf bourguignon, but maybe that will be next week for the big finale! Of course, receiving a recipe with scallops was no disappointment as I LOVE seafood and scallops are no exception! As usual the recipe did not disappoint, making for a rich and delicious appetizer that left me craving more (as good appetizer’s should!).

Provencal Tomatoes | JC100 – Week 12

Here is the second recipe from Week 12 of the Julia Child JC100 celebration. We both agreed these provencal tomatoes were up there with the Asparagus and Hollandaise as the favourite recipe of the week. However, we think these bad boys would best be served as a breakfast food – topped with an egg and some hollandaise sauce (as Bob tested out shortly after making them)! Easy Homemade Balsamic Reduction

With summer finally arriving, fresh fruit is coming into season and I’m happy as a peach (pun intended). I’ve been eating them a lot for dessert or as a snack at lunch. When eating apricots one evening I thought – these would be great with a balsamic reduction! Now for those who haven’t tried balsamic reduction, it has a sweet-tart taste that enhances the sweet richness of fruit. Essentially, the combination of flavours play on each other to heighten each individual flavour palette. The balsamic reduction is great on top of fresh fruit like peaches, apricots, strawberries, blueberries, etc. Let’s get to this recipe so you can enjoy your summer fruit with a twist.
