Look at that beautiful thing! A glorious Cuban Sandwich filled with roast pork, crackling, ham, pickles, swiss cheese, and mustard, all on fresh Cuban Bread! Delicious! Sandwiches get me going, as you can probably tell, and this one is no exception. It has been quite some time since I have enjoyed a grilled sandwich, and as you know, they have kind of been this blog’s claim to fame! Being in the mood, I picked up some deli meat, and went about creating something with what else I had on hand. I knew the trio of Spanish deli meats would go great with the tomato coulis in my fridge, along with some homemade mayo, fresh bread, and other fresh ingredients from my garden, I was on my way to a killer sandwich!

Barbecue season is here! To celebrate, Carlene and I were asked to talk about barbecuing on CBC Radio’s Saskatoon morning show, and to share some barbecue recipes that differed from the usual steak and burgers. Although we already have a fair bit of unique BBQ recipes on the blog, it got me thinking about the other things I have barbecued but never blogged.
I love grilling squash, veggies, fruit, grilled cheese, you name it, I’ll grill it! With all those on my mind, I settled on making something with grilled peaches. That way I could incorporate it into a main dish, as well as a dessert!

Browsing through my favourite magazine (Bon Appetit of course!) I came across this simple and delicious looking recipe for Citrus Marinated Chicken. Taking some chicken out of the fridge, I went about assembling the marinade when it took a bit of a left turn! Cutting into what I thought was an orange, but was actually a small, very orange-esque grapefruit, I had to make a little change of plans! Undeterred, I went with it, using grapefruit as my main citrus and making a few changes here and there to the recipe.
In the end, it all worked out and I had myself some tasty chicken. It had some great teriyaki flavour with hints of citrus and a really nice caramelization from the sugars in the marinade. Served with some rice and fresh veggies, it made an easy and delicious meal!

I was blessed with straight teeth, and fortunately didn’t have to exile my pearly whites to years behind bars. As a result, my love for corn has remained strong and every summer when corn is in season, I fully embrace it!

After making the amazing Bacon & Blue Cheese Steak the other day, rather then just heat up the leftovers, I wanted to make something delicious and blog-worthy! Continuing on with the blue cheese and bacon theme, I settled on making a delicious steak salad with bacon blue cheese dressing for lunch!
It was great! Fresh romaine lettuce, topped with tender steak and a tangy homemade blue cheese dressing made a refreshing, yet hearty lunch!

Let this mark the beginning of our month long ode to the almighty Grilled Cheese! As part of National Grilled Cheese Month (possibly the best month ever), we are going to be posting a new grilled cheese EVERY DAY, yes you read that right! Every day tune-in to BS’ in the Kitchen and treat your visual tastebuds to some amazing new grilled cheeses (and THEY WILL be amazing!).
To start things off I present the Smoked Salmon Bagel Grilled Cheese, all the classic flavours of a smoked salmon bagel, with some Gruyere cheese, grilled to perfection! And when I say perfection, I mean it! This sandwich/bagel was amazing! I don’t even like smoked salmon that much, but it paired really well with the Gruyere cheese, I couldn’t get enough! You get the crisp exterior of the bagel, a smooth, creamy layer of cream cheese, a subtle bite from the red onion mixed in with the smokey, nutty flavour from the salmon and Gruyere. Then every couple of bites, there is a burst of pickled-vinegary flavour from the capers and a fresh bite of dill. The ingredients balanced each other so well and made for one unreal grilled cheese!

I’ve been feeling guilty lately.
Guilty because it has been A LOOONG time since i’ve gone to the gym (which I used to do regularly), and guilty because my blogging output has been pitiful the last couple months.
With big intentions to go to the gym today, I got home from work to find this delicious looking focaccia bread on my counter. This is where my resolutions fail me.

While I’m an avid fan of pork chops, I can still fall victim to the common problem of overcooking them! Fortunately this is where brining comes into play. Having never actually brined something, I was looking forward to the results and decided to go with a fairly simple brine.
