Here is a recipe I created the same day I made the delicious Smoked Salmon Bagel Grilled Cheese. Given that I wanted to keep things grilled cheese focused during April, I have kept from posting it until now! Although for anybody following me on Instagram, you might remember seeing it!

As I have previously mentioned, I’m not crazy about smoked salmon, often finding it far too pungent, but it’s a whole different story here! Well balanced with a number of other ingredients, namely fresh dill, capers and sour cream, the smoked salmon enters into a beautiful union of flavours!

In a continuation of my previous post for Baked French Fries I present to you the always delicious Poutine! This is super easy to make, and I know some of you will shame me for not using REAL gravy, but I gotta say, that salty, delicious instant gravy tastes wonderful on these fries. Guilty pleasure? Maybe.

Anyways, you can’t beat the speed of this one. Baked french fries to Poutine in like 5 minutes! Sounds good to me!

This is more of a guideline than a recipe, because well, who am I to tell you how much gravy and cheese curds you should be putting on your fries!

Anyone who buys those bags of frozen french fries is just cheating themselves. Especially if you have potatoes in your cupboard. These things are so simple, so delicious, and just look at how beautiful they are! Your frozen potato sticks don’t come close! Grab a russet potato, slice it up, bake it and feel the guilt wash away as you eat these non-deep fried homemade beauties (and then feel guilty as you realize you just ate a ton…oops!). Once again Bon Appetit is appealing to my taste buds with this recipe. Pork chops are a regular staple in my diet, I love acorn squash, AND simple recipes! Although I’ve never been a huge fan of cilantro, it was perfect in this recipe, really complimenting the flavour of the squash seeds, I actually found myself eating the extra seeds mixed with fresh chopped cilantro! As always, I made a few modifications to the recipe, cutting it down to a single serving, and using the acorn squash seeds instead of pumpkin seeds. It also said to shell the seeds, which I definitely was not going to take the time to do! Instead I left them whole and roughly chopped them as stated in the recipe, and it tasted great!

Pepperoni Stuffed Mozzarella Sticks

After making “The Canadian”, I had an abundance of pepperoni and mozzarella cheese leftover. In my efforts to use the rest of it, I had a stroke of genius, creating Pepperoni Stuffed Mozzarella Sticks! Having never made homemade mozzarella sticks, I thought stuffing pepperoni in them might not be the smartest move, but screw it! I did it anyways! Roasted Corn Guacamole

After working way too many hours this week, I’m finally getting some well deserved R & R this long weekend, at my girlfriends family’s gorgeous cabin in Columbia Lake, BC. Being so busy at work, I’ve been neglecting my blogging duties, and relaxing at a cabin goes hand in hand with having plenty to eat and drink, which just so happens to go hand in hand with a little blogging!
