Baked onion rings have been on my to-do list for a couple months now, so having plenty of free time this long weekend I finally got around to trying them out! While they can be a little bit time consuming (from unpeeled onion – to onion ring in my mouth, it probably took around an hour to an hour and a half), they were definitely worth it!

Deconstructed Guacamole Sandwich

After picking up an avocado at the grocery store, in hopes that I would do something cool with it, I had planned on making a toasted tomato sandwich with avocado on it. While that would have been a simple and tasty dish, it wasn’t very creative. Fortunately, inspiration struck courtesy of the ingredients in my fridge (red onion mainly!) and the Deconstructed Guacamole Sandwich was created! These tasted great and were super easy to make, perfect for a quick snack or a twist on the traditional guacamole appetizer at at party!

Beet, Arugula & Goat Cheese Grilled Cheese

I made this grilled cheese a while ago and just haven’t gotten around to posting it, but since it’s NATIONAL GRILLED CHEESE DAY (Probably the best day ever?!?) I couldn’t not post a grilled cheese! Now this one is quite different from anything I have done in the past, with my super hearty and savoury grilled cheese such as the Baked Potato Grilled Cheese. I am personally more a fan of those ones, but I enjoyed switching it up with this one! What are your guys thoughts?

Sautéed Spinach & Turkey Sandwich

Initially I had no plans on posting this recipe and was just making it because I was hungry, but after I made it, cut it in half and tried a little piece that fell out, it was too delicious and beautiful not to post! Fried Pickles

I first saw fried pickles awhile back and thought, what a strange, but interesting combination that was. Since then and more recently my eyes have come across more fried pickles and figured what the heck, they would be easy to make and I have all the ingredients so let’s try ‘em! After texting Carlene and telling her about the next blog recipe I was going to make, it became clear we share the same brainwaves. She responds “I just bought all the ingredients to make those!”, well sister, looks like I beat you to the punch! BUT maybe we will get lucky and she will do a bit of a twist and share her recipe too!

Anyways.

Let’s get to this recipe. It was strange but tasty (as evidenced by the empty bowl  I found myself with afterwards…).

Fried Panko Zucchini & Egg Stacker

Since we had a frost warning yesterday, I went out to the garden in my backyard to help my Mother pick all of the tomatoes, peppers and zucchinis so we had plenty of fresh vegetables in the house! Sundried Tomato Hummus

Here is a quick posting for some hummus I made using a recipe from another cooking blog here. I decided to add some extra flavour by putting in some sundried tomatoes. Just follow this recipe but add sundried tomatoes into the hummus and puree until you are satisfied with the extra flavour. Enjoy with some pita/tortilla chips or your favourite veggies!
