<p>Tomorrow (or I guess today once this post is published), I will be making my way to New York for the first time, where I will most certainly be enjoying a slice of pizza or two! In the spirit of New York and pizza, I felt this recipe that has been hanging out in my blog archives for quite some time needed to be shared!</p>
<p>This awesome pizza uses <a href="http://www.amazon.com/gp/product/0307886158/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=0307886158&amp;linkCode=as2&amp;tag=bsinthki05-20" target="_blank">Jim Lahey&#8217;s amazing &#8220;no-knead&#8221; pizza dough</a>, making it ridiculously easy to make! You basically just put everything in a bowl the night before, and voila, the next day it has become an amazing pizza dough! Now that&#8217;s my kind of recipe! Of course, I had to add a little bit extra to it, because following a recipe to the tee is never as much fun!</p>

<li class="instruction" itemprop="recipeInstructions">Combine dry ingredients in a mixing bowl, slowly add the water, whisking until ingredients are well combined. Be generous with the garlic powder and oregano!</li>
<li class="instruction" itemprop="recipeInstructions">Gently mix the dough with your hands until a ball is formed.</li>
<li class="instruction" itemprop="recipeInstructions">Cover bowl with plastic wrap, allowing the dough to rest at room temperature for around 18 hours, or until roughly double in size.</li>
<li class="instruction" itemprop="recipeInstructions">Once dough has rested, cut into three portions. On a floured worked surface, gather four corners to the center of the dough, creating four folds.</li>
<li class="instruction" itemprop="recipeInstructions">Place seam side down, gently form dough into a ball, dust with flour, wrap in plastic, or cover with damp towel and let rest for 1 hour.</li>
<li class="instruction" itemprop="recipeInstructions">Before cooking the pizza, turn oven to its hottest setting (~500F), allowing to preheat for one hour. If using a pizza stone, place it in the oven before preheating.</li>
<li class="instruction" itemprop="recipeInstructions">To form the discs, flour a work surface, and using the back of your hands, gently stretch the dough into 10-12 inch discs.</li>
<li class="instruction" itemprop="recipeInstructions">If using pizza stone, place pizza on the stone, turning the oven to broil, and cook for 5-7 minutes until pizza is cooked to your liking.</li>
<li class="instruction" itemprop="recipeInstructions">If you don&#8217;t have a pizza stone, place pizza on a floured baking sheet, cooking for about 10 minutes on the ovens hottest setting.</li>

<p>My family has always been big on leftovers, and as a result I embrace the ability to re-purpose yesterdays meal into something new and delicious! More often than not, it&#8217;s something simple like a sandwich or quesadilla, but depending on what you&#8217;re left with you can make some pretty awesome meals! In this case, after a work related function, my mom was left with a bunch of roast beef and potatoes, which became this delicious twice baked potato!</p>
<p>Scouring my fridge for complementary ingredients, I found blue cheese and mushrooms, which goes great with both roast beef and potatoes! Combine all of those things together and you have a great side dish or appetizer for your dinner!</p>

<li class="instruction" itemprop="recipeInstructions">In a pan on medium heat, add some butter along with your chopped mushrooms, sauteing for about 5 minutes until they begin to soften.</li>
<li class="instruction" itemprop="recipeInstructions">Slice your potato in half, and using a spoon, remove the inside to a bowl.</li>
<li class="instruction" itemprop="recipeInstructions">Add roast beef, blue cheese, mushrooms, and green onions to the bowl, mixing together and adding salt &#038; pepper to taste.</li>
<li class="instruction" itemprop="recipeInstructions">Place filling back inside potato skins.</li>
<li class="instruction" itemprop="recipeInstructions">Bake at 350F for ten minutes, then turn to a broil, cooking until the top is crisped.</li>

<p>Thanks to my dad&#8217;s rigorous tournament fishing schedule every summer, my family did a LOT of camping, going nearly every weekend! As such, I have many fond memories growing up that revolve around our camping expeditions. Singing &#8220;Down by the Bay&#8221; as many times as possible to annoy Carlene, making every funny face I could think of while driving to annoy Carlene, &#8220;accidentally&#8221; crossing over &#8220;The Line&#8221; of the backseat to annoy Carlene&#8230; Okay so you get it, I spent a lot of time trying to annoy my sister!</p>

<p>Even though it was nearly a full-time job doing that, there were many great memories we can both look back on fondly. These simple roasted marshmallows dipped in Baileys are one them! Amazing on their own, they were made even more awesome,  by the whole &#8220;my parents let me have a sip of alcohol, I&#8217;m so mature now!&#8221; feeling you get when your dad lets you  have a sip of his beer, or in this case, your mom dips a marshmallow in Baileys.</p>
<p>The beauty of this is in its simplicity! Roast a marshmallow, dunk it in a cup of Baileys, and enjoy!</p>

<ol>
<li class="instruction" itemprop="recipeInstructions">In a bowl add oats, brown sugar, whole wheat flour and butter, mixing with a fork until pieces of butter are evenly dispersed throughout the mixture.</li>
<li class="instruction" itemprop="recipeInstructions">Add in your chopped apples, cinnamon, and white sugar, mixing together.</li>
<li class="instruction" itemprop="recipeInstructions">Take three long pieces of aluminum foil (about a foot and a half), fold each side up and pinch the ends together forming a boat-like shape.</li>
<li class="instruction" itemprop="recipeInstructions">Place the ingredients in the center of the aluminum foil, folding the sides over and pinching to seal the package.</li>
<li class="instruction" itemprop="recipeInstructions">You can also make individual packages, by folding like the image above!</li>
<li class="instruction" itemprop="recipeInstructions">Place on a grate over the fire pit, cooking for about 15-20 minutes.</li>
<li class="instruction" itemprop="recipeInstructions">If your fire doesn&#8217;t have a grate, place the package in the fire pit, on the edge furthest from the flames, rotating once after 10 minutes of cooking.</li>

<p>If you really wanted to, you could probably get away with eating this at breakfast too! I mean, it has oats AND apples in it, so that&#8217;s pretty breakfasty if you ask me! <p>Hasselwhatever, this is a great way to cook your potato, not to mention it looks fancy too! It takes the joy of a baked potato, and amplifies it by stuffing delicious ingredients into each slice of the potato! Placing the bacon and onion together in each slice caramelizes the onion, while roasting the whole potato in bacon fat. Oh, what a wonderful thing!</p>

<ol>
<li class="instruction" itemprop="recipeInstructions">Cut even slices along the potato about a &#8532; of the way down the potato.</li>
<li class="instruction" itemprop="recipeInstructions">Place slices of onion in each crack of the potato, then stuff bacon inside on top of onions.</li>
<li class="instruction" itemprop="recipeInstructions">Take about a foot and a half of aluminum foil, folding it in half.</li>
<li class="instruction" itemprop="recipeInstructions">Place potato on the aluminum foil, adding salt &#038; pepper to taste.</li>
<li class="instruction" itemprop="recipeInstructions">Fold the aluminum foil around the potato.</li>
<li class="instruction" itemprop="recipeInstructions">Add another layer of aluminum foil around the already foiled potato.</li>
<li class="instruction" itemprop="recipeInstructions">Place foiled potato into the firepit, beside the fire (refer to picture).</li>
<li class="instruction" itemprop="recipeInstructions">Cook for about 45 minutes, rotating every fifteen minutes.</li>

After making a promotional video for National Grilled Cheese Month (<a href="http://youtu.be/QcCN4do7pJw" target="_blank">watch it if you haven&#8217;t!</a>), I was contacted by <a href="http://www.tablespoon.com" target="_blank">Tablespoon.com</a> (a website under the General Mills brand). They wanted to know if I had made the video (I did!), as they were interested in a video partnership to produce similar content for their website! After emailing back and forth, we decided a great topic for the first video/blog post would be &#8220;How to Roll a Spring Roll&#8221;.</p>

<p>As I mentioned in <a href="http://bsinthekitchen.com/turkey-spinach-bacon-meatballs/" target="_blank">yesterday&#8217;s post</a>, I had become intrigued by the idea of &#8220;One Pot Pasta&#8221; after watching an episode of <a href="http://www.youtube.com/watch?v=rQQpZaZh2gQ" target="_blank">Bon Appetempt</a>, so here it is! I tossed this recipe together with what I had on hand, hoped for the best and was rewarded with a delicious dinner! I&#8217;m not a fan of heavily sauced pasta dishes, especially now that we finally have some nice weather in Saskatoon, so this hit the spot perfectly! A light, fresh pasta dish that doesn&#8217;t leave you feeling like you just ate a brick!</p>

<li class="ingredient" itemprop="ingredients">1 tomato (chopped)</li>
<li class="ingredient" itemprop="ingredients">100 g (1 serving) of uncooked spaghetti</li>
<li class="ingredient" itemprop="ingredients">1&frac12; cups of water (or broth)</li>
<li class="ingredient" itemprop="ingredients">salt &#038; pepper</li>
<li class="ingredient" itemprop="ingredients">parmesan cheese</li>

<ol>
<li class="instruction" itemprop="recipeInstructions">In a pan on medium heat, add olive oil.</li>
<li class="instruction" itemprop="recipeInstructions">Once pan is heated, add meatballs, cooking about 5 minutes allowing them to brown.</li>
<li class="instruction" itemprop="recipeInstructions">Add chopped tomatoes and spinach, cooking for about 2 minutes.</li>
<li class="instruction" itemprop="recipeInstructions">Add in pasta and water (or broth if you wish).</li>
<li class="instruction" itemprop="recipeInstructions">Once water reaches a boil, turn heat to low and simmer with the lid on for about 20 minutes or until water reduces to form a light sauce. You could also add a splash of cream, or sour cream to the dish if you prefer a creamier sauce!</li>
<li class="instruction" itemprop="recipeInstructions">Salt and pepper to taste.</li>
<li class="instruction" itemprop="recipeInstructions">Garnish with plenty of parmesan!</li>

Alternatively, you can skip the meatballs and just take ground turkey, spinach, red onion, and garlic, toss them in the pan and go from there!</p>

<p>Anybody else out there enjoy the awkward and hilarious online cooking show made by food blog <a href="http://www.bonappetempt.com/p/videos.html" target="_blank">Bon Appetempt</a>? About two months ago, I was going on a 3AM Vimeo food video binge when I came across Bon Appetempt&#8217;s &#8220;<a href="http://www.youtube.com/watch?v=4QLv-ir2llI" target="_blank">30-Minute Meal?&#8221; video</a>. Shortly after discovering Bon Appetempt, I began watching their videos and not so shortly after, I had finished all of them. They are awesome. Go see for yourself!</p>

<p>Anyways, this recipe inspiration came about after watching their video for &#8220;<a href="http://www.youtube.com/watch?v=rQQpZaZh2gQ" target="_blank">One Pot Pasta</a>&#8220;. Not usually one to crave pasta, I really wanted to try this out. Now I had already planned to make something with the ground turkey in my fridge, so I settled on making these meatballs, which I then combined into a one pot pasta which I will be posting tomorrow!</p>

<li class="instruction" itemprop="recipeInstructions">In a pan on medium heat, add olive oil. Once heated add minced onion, garlic and spinach, cooking until spinach has wilted.</li>
<li class="instruction" itemprop="recipeInstructions">In a bowl combine your cooked ingredients with ground turkey, bacon, panko, egg, and salt &#038; pepper, mixing until combined.</li>
<li class="instruction" itemprop="recipeInstructions">Line a cookie sheet with parchment paper, take a heaping tablespoon of the meatball mixture, form into a ball, and place on the cookie sheet.</li>
<li class="instruction" itemprop="recipeInstructions">Cook in the oven for 15-20 minutes, until fully cooked.</li>

<p>Today I found myself with an abundance of hot dogs in my fridge and no hot dog buns to be found. Now some people may just give up right there. Not me.</p>
<p>I was determined to eat two hot dogs for lunch.</p>
<p>I could have settled on eating them bunless, or on a slice of bread, but that just wasn&#8217;t doing it for me. Then I saw mini tortillas in my freezer, and I knew what I had to do&#8230;</p>

<p>I present to you Tortilla Hot Dog Wraps, or &#8220;Pigs in a Poncho&#8221; as some people call them! I kept my ingredients pretty simple, but please, add whatever you want to yours! These were delicious! Tasty hot dog, surrounded by gooey cheese, red onion, encased in a crunchy tortilla. YUM!</p>

<ol>
<li class="instruction" itemprop="recipeInstructions">Get a pan on medium-low heat, add enough oil to coat bottom of pan.</li>
<li class="instruction" itemprop="recipeInstructions">If you want your hot dogs to poke out each end, then slice two of the edge off each tortilla (refer to picture).</li>
<li class="instruction" itemprop="recipeInstructions">Place some red onion near bottom of tortilla, then sprinkle cheese on tortilla, and top with hot dog.</li>
<li class="instruction" itemprop="recipeInstructions">Roll tightly around hot dog.</li>
<li class="instruction" itemprop="recipeInstructions">Place in pan with the end of the tortilla on the bottom, which allows it to fry and stay closed.</li>
<li class="instruction" itemprop="recipeInstructions">Rotate as each side becomes golden brown, cooking until the whole tortilla is golden brown.</li>
<li class="instruction" itemprop="recipeInstructions">Remove to paper towel and sprinkle with salt.</li>
<li class="instruction" itemprop="recipeInstructions">Serve with your favourite dipping sauces.</li>

<p>Here is a recipe I created the same day I made the delicious <a href="http://bsinthekitchen.com/smoked-salmon-bagel-grilled-cheese/" target="_blank">Smoked Salmon Bagel Grilled Cheese</a>. Given that I wanted to keep things grilled cheese focused during April, I have kept from posting it until now! Although for anybody <a href="http://instagram.com/bobdeutscher" target="_blank">following me on Instagram</a>, you might remember seeing it!</p>
<p>As I have previously mentioned, I&#8217;m not crazy about smoked salmon, often finding it far too pungent, but it&#8217;s a whole different story here! Well balanced with a number of other ingredients, namely fresh dill, capers and sour cream, the smoked salmon enters into a beautiful union of flavours!</p>

<li class="instruction" itemprop="recipeInstructions">Combine ingredients in a bowl, mix together and add salt &#038; pepper to taste.</li>

<p>This is a relatively simple recipe, and if you really dislike smoked salmon, or just can&#8217;t find it at your grocery store, it would be a great potato salad without it!
