Here is a spur of the moment recipe I decided to throw together and it was mighty tasty!

Since I have never cooked stuffed chicken breast or quinoa for that matter, I was very pleased with what came of it. I started with the quinoa, putting in a cup of water with a cup of quinoa, adding a tablespoon of butter and some garlic plus to the water and let it cook til it was tender enough. As  I was cooking the quinoa, I roasted some red peppers and tomatoes on the barbecue and added them, along with some crumbled feta to the quinoa.

To stuff the chicken I just sliced the middle open, put the quinoa mix in and used some toothpicks to hold it together. I kept the chicken seasoning simple, with some parmesan and Italian dressing on the top and a little bit of greek spice.
