I can’t believe it’s September already. Where did this summer go? I’m not sure if it was having the snow stay into early May or just being so busy, but this summer seemed to wiz right by. With September here in full force, so is school. Yup that’s right – back to the books, the late night studies, copious amounts of coffee and the ever growing wealth of knowledge. When CTV Morning Live contacted us about doing another segment, this time anchored around budget and student friendly meals, Bob and I agreed to the challenge (the video of the segment is posted below – tune in to see who received the “dunce” cap). Bob made some flavour packed chicken cacciatore and my rival dish was one of my favourite foods: Vietnamese cold rolls. Let’s get to my recipe (which by the way costs an average of $2.49 CAD for a serving of four cold rolls).

In pursuit of all things cheesy, Spanakopita was one of the many things that came to mind. Not only does it contain one of my favourite ingredient pairings (spinach, garlic, and onions), it contains not one, but TWO types of cheese, feta and ricotta! It’s hard to beat all these things combined into beautifully flaky phyllo dough. BUT in the name of gourmet grilled cheese, I scrapped that flaky phyllo for buttery, crunchy, toasted bread, and created the Spanakopita Grilled Cheese! A creamy, garlicy, spinachy, salty, crunchy piece of heaven worthy of the pallette of Poseidon (why is there no Greek God of Spanakopita?!?)!
Sorry for being a bit absent on the blog lately and an even bigger thanks to Bob for carrying things along and posting some really delicious recipes. Last night I was pretty hungry and after avoiding groceries for the past three weeks, the only thing I really had in my fridge was celery… yup you heard me… boring ol’ celery. So I chopped a bunch up and just started creating and this is what I came up with. It was a great little soup that would best be served as a side soup or an appetizer to a great sandwich (perhaps one of Bob’s fabulous grilled cheeses). Let’s continue to the recipe. Continue reading
If you’ve been following BS’ in the Kitchen, you would have noticed our recent post of Buffalo Chicken Potato Skins that we brought to a party. Well we have great news for you if you thought they looked delicious – we now bring you their partner in crime: Buffalo Chicken Dip! Great served at a party with some plain chips and best of all, it’s quick and easy to make. We should also mention that you can also create this dish if you have left over stuffing for the potatoes – so really it’s two recipes in one! Let’s get to the recipe so you can try it out yourself.
I feel pretty lucky that I have some really great friends. The majority of us met in high school, some of us have even been friends since elementary school, and have been through thick and thin together. I’d say it’s pretty special to have friendships that have lasted so many years! With some of us being married, having busy careers and even a few of us having kids, we don’t get to see each other as much as we used to, but when we do, crying from laughing so much is a guarantee! We’re also all foodie junkies and love to get together for potlucks and drinks. Knowing that there are some spice addicts in our crew and the boys will pretty much eat anything, I knew these Buffalo Chicken Stuffed Potato Skins would please the crowd! Continue reading
Now that Bob and I have both moved out of our parents acreage, we often go back home for a Sunday visit to comfort our poor empty nester parents (you miss us Mom & Dad? Right??), and in true BS’ in the Kitchen fashion, we cook the meal! This past Sunday, we offered a menu of Slow Cooker Pulled Pork with a Purple Cabbage & Apple Slaw, along with an old fashioned Carrot Cake for dessert. As an appetizer, we took to Pinterest and made this Cheesy Artichoke Bread after being highly recommended by a friend. Let’s all stop drooling and get to the recipe!
While I was creating the Roasted Garlic, Spinach & Bacon Rangoon, I also wanted to do some form of dessert finger food. Seeing as I still had half a pack of wonton wrappers left, and several cans of pumpkin filling in my cupboard, this was a no brainer! It’s a fun take on your traditional pumpkin pie, wrapped in wontons, fried into a crispy dumpling, sprinkled with cinnamon sugar and dipped in some whipped cream! Probably don’t need to convince you to try these ones hey? Well if I do, just imagine a cross between pumpkin pie and a churro! YUM!
With the holidays around the corner, appetizers are a much needed item at any get together, so why not spend a little extra time and make some delicious homemade ones? Better yet, get some friends together, make a large batch, have some drinks and have yourself an appie making party! As part of our holiday inspired cooking segment on CTV Morning Live – Saskatoon, tomorrow morning (December 18th – 8:30AM), I tossed around a few different ideas, but ultimately decided on creating these Roasted Garlic, Spinach & Bacon Rangoon appetizers, and boy am I glad I did! They are DEELISH!
Initially, when asked to do a cooking segment on CTV Morning Live we were going to do something holiday inspired (those recipes will be coming in the near future!). But when they mentioned doing something Grey Cup inspired, I thought PERFECT I can make an epic grilled cheese inspired by one of the many game day appies people love! Well what goes hand in hand with cheese other than a grilled cheese? Nachos of course! So I present the Doritos encrusted Loaded Nacho “Game Day” Grilled Cheese! It’s a wild one so get ready!
After picking up an avocado at the grocery store, in hopes that I would do something cool with it, I had planned on making a toasted tomato sandwich with avocado on it. While that would have been a simple and tasty dish, it wasn’t very creative. Fortunately, inspiration struck courtesy of the ingredients in my fridge (red onion mainly!) and the Deconstructed Guacamole Sandwich was created! These tasted great and were super easy to make, perfect for a quick snack or a twist on the traditional guacamole appetizer at at party!
