Barbecue + Chicken + Fresh Herbs = Magic. I’ve never been much of a mathematician, but that is one equation I can wrap my head around! Fall is coming waaay to quick in Saskatoon and I’m not happy about it! While I love Fall and the beautiful colours it brings, sadly, it means barbecue season is almost over, and that, my friends, is a time of great sadness. In the spirit of summer, I encourage you to go forth, spatchcock a chicken (yes that’s right), rub it with delicious chimichurri, and barbecue that thing whole! At least that’s what I did here.

Carlene and I have finally made our re-appearance together on CTV, whipping up barbecue recipes for August long! Steph from CTV made a special request for Beer Can Chicken, and left us up to decide what else we wanted to do, so Carlene settled on Ice Cream Tacos! It’s actually a bit absurd that this is the first time doing Beer Can Chicken on the blog, as it’s something our family has been doing for years and years, even before the whole Beer Can Chicken craze took place!
I know, I know, this isn’t technically “Beer Can” chicken, since I used Snapple, but the concept is the same! In fact, beer really isn’t necessary to make “Beer Can Chicken”, using other soda’s, or water infused with herbs, or tea, can add a nice subtle flavour to your chicken, so feel free to experiment!

I was blessed with straight teeth, and fortunately didn’t have to exile my pearly whites to years behind bars. As a result, my love for corn has remained strong and every summer when corn is in season, I fully embrace it!

June has been a pretty great month in the Life of Bob! I finally got to share two recipe videos I produced for General Mills’ website Tablespoon.com, with one more being published in a couple days, and two more currently in the works! It’s been great so far, and i’m looking forward to doing more projects with them! I’ve also been finishing a couple recipe videos of my own that I shot several months ago (buttermilk biscuits, and ricotta gnocchi)! Carlene & I also had another wonderful CTV segment, which was a lot of fun, shooting live on location at our parents acreage! Video galore!
Along with all of that, I went on an amazing trip with my girlfriend’s family to Toronto and New York, both of which I had never visited before! It was a quick 9 day trip (with travel for three of those days), but we saw a lot, ate even more, and I snapped a ton of photos (check out my Instagram to see some of them)!

Today I found myself with an abundance of hot dogs in my fridge and no hot dog buns to be found. Now some people may just give up right there. Not me.

We were recently contacted by Cookin’ Greens to create a unique and tasty using some of their fresh frozen vegetable mixes. Bob & I decided that creating a veggie packed BBQ pizza would be the best option! Now here is something cool about Cookin’ Greens which I really appreciate: all their frozen veggies (chopped kale, chopped spinach, chopped rapini, Designer Mix and the Athlete’s Mix) are frozen within six hours after being freshly farm picked, then are double washed, double blanched, chopped and flash frozen to seal in the maximum amount of nutrition and flavour. Okay BS’ers…. I have something to confess….I’ve never BBQ’d before. Yup, that’s right. Never turned on a BBQ, never put food on a BBQ, never turned off a BBQ. Yet have eaten tons of food cooked on a BBQ. Why you ask? That’s always been Bob or my Dad’s job. Let’s start off by saying WOOOOOOWWW. This latest grilled cheese creation is absolutely amazing and dare I say the best one yet?? First off, I grilled it on the barbecue, so that alone is a game changer, and second, it contains amazing ingredients from my previous grilled cheeses like potatoes, chives and caramelized onions, but adds juicy steak and provolone cheese into the mix! Seriously, this is like a steak sandwich on steroids! The idea came about while at work, as I was discussing my next grilled cheese prospect with my co-worker and friend of many years, Brett T. I had decided my next creation was going to be a barbecued grilled cheese, when Brett threw it out there…STEAK & POTATO GRILLED CHEESE.
The room was silent.
Not really…But I knew this was going down as soon as possible. The wheels started turning as I began envisioning how this behemoth of a grilled/BBQ’d cheese sandwich was going to come together, here is what I came up with.
