The time has come for another Ethnic Potluck with the Ayden Kitchen & Bar crew, and this time I drew Cuba! What dish would I cook? Well, with my reputation for delicious sandwiches, and my last Ethnic Potluck contribution being a Banh Mi, it made perfect sense that I tackle the famous Cubano! Now, when serving Cuban Sandwiches to a room full of chefs, you can’t go about it half-assed! Although I have never been to Cuba, or had an authentic Cuban Sandwich, from my research, I knew the bread was a very important part. It’s a sandwich, so of course the bread is important. It’s half the damn thing!

It’s a Montreal smoked meat sandwich on steroids (a.k.a. with cheese). Juicy smoked meat, rich, salty cheese curds, paired with lots of tangy mustard, sandwiched between two pieces of crunchy rye bread, I’ll be tasting this one for days! I sat there like a proud Canadian would, devouring this sandwich in my plaid flannel shirt, and YES I even spilled mustard on it! It was a glorious moment, and though I have not an inch of French in me, I proudly ate this Montreal inspired meat and cheese fest!

Taaake me out to the baaalll gammee, taake me out with the crowwd… I think that’s what my tastebuds were singing as I was eating this one. Talk about flavour! This one had loads of it! Hotdogs, mustard, ketchup, relish, fried onions, and loads of cheese! I think I need to go run around the bases more than a few times after this one! Carlene got the bases loaded with this one, prepping all the ingredients, and I hit the home run and fried it up!

Now that Bob and I have both moved out of our parents acreage, we often go back home for a Sunday visit to comfort our poor empty nester parents (you miss us Mom & Dad? Right??), and in true BS’ in the Kitchen fashion, we cook the meal! This past Sunday, we offered a menu of Slow Cooker Pulled Pork with a Purple Cabbage & Apple Slaw, along with an old fashioned Carrot Cake for dessert. As an appetizer, we took to Pinterest and made this Cheesy Artichoke Bread after being highly recommended by a friend. Let’s all stop drooling and get to the recipe!
Baked onion rings have been on my to-do list for a couple months now, so having plenty of free time this long weekend I finally got around to trying them out! While they can be a little bit time consuming (from unpeeled onion – to onion ring in my mouth, it probably took around an hour to an hour and a half), they were definitely worth it!
