After making “The Canadian”, I had an abundance of pepperoni and mozzarella cheese leftover. In my efforts to use the rest of it, I had a stroke of genius, creating Pepperoni Stuffed Mozzarella Sticks! Having never made homemade mozzarella sticks, I thought stuffing pepperoni in them might not be the smartest move, but screw it! I did it anyways! While the process of making them was a little tedious, the end result was delicious! Here’s how it went down!

Baked onion rings have been on my to-do list for a couple months now, so having plenty of free time this long weekend I finally got around to trying them out! While they can be a little bit time consuming (from unpeeled onion – to onion ring in my mouth, it probably took around an hour to an hour and a half), they were definitely worth it!

As usual, the recipes I post on this blog are dictated by what is currently in the fridge (i’m too lazy to go searching the grocery store for specific ingredients!). so when I was greeted by a nice purple eggplant in the fridge and some sourdough bread on the counter, this is what ensued!

After picking all the jalapenos off my dad’s plant, I really wanted to make some jalapeno poppers, but felt like I should try doing something more original, thus the Jalapeno Popper Potato Cakes were born!

Since we had a frost warning yesterday, I went out to the garden in my backyard to help my Mother pick all of the tomatoes, peppers and zucchinis so we had plenty of fresh vegetables in the house! After picking a few massive zucchinis I figured it was necessary use them in my lunch somehow, and thus this recipe was born!

It’s been a while since I last posted, though I have still been contributing with some picture taking for Carlene’s posts! Now that Christmas and all that is over it’s time to get back into the swing of things. Growing up with a father who fishes on a semi-professional level, Carlene and I are no strangers to the joys of fishing and eating fish (especially walleye)! So it’s about time we posted some walleye (or Pickerel as some call it) on the blog. I came across this unique fish and chips recipe a while back which provided my inspiration for this meal.
Whenever I am lucky enough to get home from work at a decent time while the sun is still shining bright, I try to cook something. All that light and I just want to take pictures of food! I’m crazy I know.
So after getting home from work I wanted to whip up a quick recipe and thought what better than fried green tomatoes, seeing as I had several in my garage (which my lovely mother worked painstakingly hard to pick from her garden – Thanks mom!). I have never even had fried green tomatoes, but I have had green tomato relish and really enjoy that, so what couldn’t be delicious about fried green tomatoes? I definitely enjoyed these, they had a unique flavour and I really enjoyed the tartness along with the rich flavours from the breading. I really want to put these in my next sandwich!
