Today I realized I hadn’t posted anything on this blog for the last month and a half…since starting this blog over three years ago, it’s been updated fairly regularly, and while there have been slow months, there has always been a few new recipes each month…until now…almost. Coming to that realization, I knew I needed to take some time today and at least post one thing, because I feel really bad about how neglected this blog has become.
For those who have been sticking around, I thank you! I definitely don’t want to neglect the blog, and have no plans to stop blogging, it’s just been a very busy several months. All though things are quite busy, it’s awesome and a blessing when starting your own business! Although I have been away from the blog, I’ve been doing plenty of food related work. I’ve continued shooting recipe videos and blogging for tablespoon.com, creating and managing a visual marketing campaign for Ayden Kitchen & Bar (Top Chef Canada winner Dale MacKay’s new restaurant), and more recently becoming the video editor for a hunting TV show! It’s been a busy few months, and I don’t see it slowing down, but i’m learning a ton, and getting better at managing several projects at once!

I have been the fortunate recipient of a very large box of crab apples…
Unfortunately most of them aren’t ripe…
Having been picked a couple weeks too early, they are quite sour. In my efforts to use them up, I have been cooking the apples to sweeten them and using them as an oatmeal topping. As I was cooking the apples, it dawned on me “why am I not posting this on the blog?”. Of course, once that crossed my mind, I grabbed my camera and took a few shots so I could share it with all of you wonderful people!

The Breakfast Pizza – the end of a trilogy! This also marks the 4th day in a row that I have eaten pizza. I can’t complain though, pizza is a wonderfully balanced meal in my eyes (and stomach)!
I figured it was time to try making a breakfast pizza, and let me tell you, it did not disappoint! Not only did it gift my nostrils with the pleasant aroma of my breakfast favourites, the flavour was wonderful! Combining breakfast classics onto thin, airy pizza crust, how could you go wrong? Well you can’t! Unless you burn it of course…

During a recent trip to Toronto, I had delicious cereal crusted french toast for breakfast that left me inspired to create something similar! The french toast had a corn flake crust, giving it a crunchy, slightly sweet exterior, but rather than copying the recipe exactly, I went ahead and used Cinnamon Toast Crunch for my version!
This french toast was rich, crunchy, and sweet, perfect for those times you really want to spoil yourself for breakfast!

Now for the sweet (and beautiful) crepe! Along with making the Green Onion Parmesan Crepe for our CTV Morning Live Mother’s Day special, we decided these red velvet crepes would be another great option. Not only are they delicious, but the vibrant colour looks quite impressive if I do say so myself!

Whenever “ooey gooey, runny egg yolk” is involved in a recipe, say no more! I WANT IT! Not to mention, bacon AND cheese! Like seriously, what am I doing to myself?! Now I was having a bit of an internal struggle with this grilled cheese, deciding, hmmm should I put a hashbrown in it, or would that be too much? After all these epic grilled cheeses, I was leaning towards excluding it, I mean how much can my body take!?! Of course I consulted with Carlene, and she insisted I put a hashbrown in it…well I guess that’s part of a complete breakfast right!? Clearly she doesn’t care about my health…
