Nothing says Valentines Day like coffee cake right? Well for me, it’s a simple equation, COFFEE = LOVE, so when my girlfriend Megan (The Microwave Master) had to figure out what to get me for Valentines Day, she settled on baking me a coffee cake! Given that she has only baked for me once during our nearly three year relationship, it was sure to be an undertaking! Initially she was going to make it as a surprise, but since I was in charge of supper, and already at her house, we made it together, which was 100% better, because i’m always bugging her to cook with me! It was a wonderful gift, and while I didn’t have my camera on me at the time, I made sure to get some photos the next day so I could document this beautiful cake, and create Megan’s FIRST BLOG POST! YAAAA! Maybe she will become a food blogger too! (Pig’s can fly right?).

Going into the Julia Child 100 year celebration, I knew I wanted to be involved as a way to improve my cooking skills and repertoire. What I didn’t know, is that I would be improving my baking skills too! Naturally, the first week we receive a baking assignment, Carlene is out of town, leaving it in MY HANDS! Red velvet is one of my favourite cakes. Everyone thinks it’s really fancy, but let’s get real here – it’s super easy. Just think of it as a mellowed chocolate cake with some kick (all thanks to our buddy vinegar). In the past, I religiously used the Magnolia Bakery Red Velvet cake from their great cookbook, but found it to be a tad dry and dense, so I decided to switch it this time to Chef Cake Man Raven

Well I must be honest… I tried to make an angel food cake from scratch last week and I failed… like not even failed a little bit… failed miserably. The whole thing didn’t even rise – but I blame the recipe since it said to combine the flour right to the eggs – and I shouldn’t have known better but hey…. learn from your mistakes right? At work we have an Iron Chef Challenge once a month where a group of people cook off and have their dishes judged by a panel of fellow employees. This month’s secret ingredient is…. PESTO! Right away I knew I didn’t want to do something traditional with pesto, so I ventured off to what I know best: Dessert. I made a Basil Chocolate Cake with a Parmesan Sour Cream Cheese Icing and topped it off with some pine nuts and grated parmesan cheese.
