What better way to end this month of amazing grilled cheese sandwiches, than by taking a moment to remember what brought us here: the amazing combination of cheese, butter, bread, and a hot pan. So simple, so glorious! It’s only fitting that we bid adieu to National Grilled Cheese Month with that wonderful sandwich that started it all: The Classic Grilled Cheese.

Mmmm mmmm mmM! What a grilled cheese! Gooey cheese, crunchy potatoes, all my favourite parts of scalloped potatoes, in my favourite kind of sandwich! I gotta say potatoes certainly do go well in grilled cheese sandwiches (see Baked Potato Grilled Cheese). Now for me, the best part of scalloped potatoes is the crunchy potatoes you get on the side and the top, so that’s what I was looking to emphasize (and boy did I ever!). If you love the creaminess of scalloped potatoes, all you have to do is either, cook the potatoes less, so they’re not as crunchy, or boil down a quick creamy sauce with milk, butter, and flour to go in the grilled cheese. I almost want to make another right now just to try a saucier version!

The Masochist…
At this point in National Grilled Cheese Month that is how I am feeling… Like a masochist. So it’s only appropriate that I bestow that same title upon my latest grilled cheese. In the attempt to make 30 grilled cheeses, one finds them self with an abundance of cheese in their fridge, wondering, what the heck am I going to make next!?! Looking into my fridge, pairing ingredients in my mind, I decide on my next grilled cheese.

If anyone has read the About the BS tab on our blog, you may have noticed we have a very German last name. Well our last name actually means “Germaner” or the literal translation would be “German Boy”, so it only seemed fitting that we should honour our heritage with this German Grilled Cheese. Another killer grilled cheese to report here! After buying some tuna for another recipe, it dawned on me that I could take the classic tuna melt, give it my signature twist and turn it into an amazing grilled cheese! And oh boy, was it delicious! Gruyere and cheddar holding it down on the outside, mixed with salty dill pickle, crunchy celery, a bite of fresh dill and green onion here and there, all surrounding the main attraction: Seared Tuna. Toss out your dry flaky canned tuna, there is a new sheriff in town! You’re still getting your beloved flaky tuna, but now it’s nice and moist, flaking off from around the juicy, tender, rare center of your tuna steak. Talk about gourmet grilled cheese!
Taaake me out to the baaalll gammee, taake me out with the crowwd… I think that’s what my tastebuds were singing as I was eating this one. Talk about flavour! This one had loads of it! Hotdogs, mustard, ketchup, relish, fried onions, and loads of cheese! I think I need to go run around the bases more than a few times after this one! Carlene got the bases loaded with this one, prepping all the ingredients, and I hit the home run and fried it up!
Lobster grilled cheese…really? YES. Rich meaty lobster chunks, surrounded by melting cheese, and toasty buttered bread…this was one rich, tasty sandwich! The idea for this one stemmed from thought of lobster mac & cheese which seems to be fairly popular, although I have never had it! That may need to change.
Нічого собі, що все дуже смачно! Whoops… sorry, this grilled cheese was so delicious in a traditional fashion that I started to speak ukrainian! It’s filled with all the delightful ingredients perogies are made from – potatoes, cheddar cheese, green onions and sour cream and then made even better by being assembled in a grilled cheese. I don’t want to brag too much but this GC was seriously awesome! I think Bob should watch his back…..there is a new Grilled Cheese Artist in town! Let’s get to this Ukrainian inspired recipe..

Sometimes i’m just not in the mood for an epic grilled cheese masterpiece, sometimes I need subtlety, sometimes I need simple, sometimes I need “The Slim”. A tiny, crunchy, cheesy, delicious treat that’s not going to reduce my lifespan.
The goal of this sandwich is not to be slim as in healthy, it’s more about the slimness of the bread. When sliced this way and buttered up, you get this amazing super crunchy exterior, surrounding the melted cheese. Imagine eating a potato chip stuffed with melted cheese (wow that would be awesome), this is my ode to that vision.
I feel pretty lucky that I have some really great friends. The majority of us met in high school, some of us have even been friends since elementary school, and have been through thick and thin together. I’d say it’s pretty special to have friendships that have lasted so many years! With some of us being married, having busy careers and even a few of us having kids, we don’t get to see each other as much as we used to, but when we do, crying from laughing so much is a guarantee! We’re also all foodie junkies and love to get together for potlucks and drinks. Knowing that there are some spice addicts in our crew and the boys will pretty much eat anything, I knew these Buffalo Chicken Stuffed Potato Skins would please the crowd! Continue reading
