I feel pretty lucky that I have some really great friends. The majority of us met in high school, some of us have even been friends since elementary school, and have been through thick and thin together. I’d say it’s pretty special to have friendships that have lasted so many years! It seems like its been an eternity since I last posted a grilled cheese recipe, and with JC100 behind us, I’m finally getting back to regular blogging (a.k.a. MORE GRILLED CHEESE!). As mentioned in a previous post, I spent some time at my girlfriend Megan’s family cabin in BC, relaxing and eating lots during the September long weekend. Naturally, conversation drifted towards grilled cheese at some point during our stay, and Megan’s younger cousin Kasane mentioned she always puts pickles in her grilled cheese sandwiches!
Why had I not done this before?? I’ve enjoyed pickles and cheese on several occasions, but never thought to put them in a grilled cheese! This all changed very quickly, as I later made one for Megan, and we both agreed it was a wonderful combination! So here it is folks:

It’s time for another portobello recipe! This one is real easy and a great healthy platform for all those wonderful things you put on a loaded baked potato (which may not be so healthy!). I’m pretty sure you could put sour cream, bacon, chives and cheese on anything and it would taste awesome, so this was a no-brainer!

I’m back again! This time with the second instalment in my portobello series, the Breakfast Portobello. Prior to this past month, I hadn’t done much cooking with portobello mushrooms, so I enjoyed creating some interesting and delicious ways to serve them up. Ever since visiting Montreal a few years ago, I’ve always been tempted to try my hand at making bagels from scratch. However, I always thought they were too hard – you know one of the mystery type of breads. After a colleague made them at work, I decided I need to suck it up, get over my fear and just try making homemade bagels. Lately I’ve been enjoying quite a few scrambled egg wraps, being that they are so easy to make and they taste awesome! I’ve been trying them with quite a few different ingredients (salsa, feta cheese, olives, spinach, etc.), so you may see a couple more of these in the near future, but right now I will share my most recent creation!

Behold my latest creation…THE BAKED POTATO GRILLED CHEESE! After the glory that was the Brocolli & Cheddar Soup Grilled Cheese, I began racking my brain for what other wonderful things I could deconstruct into grilled cheese format. Soon enough I had envisioned this piece of grilled cheese heaven! I mean how can you go wrong with fried potatoes, bacon, cheese, sour cream and chives all made into a melty grilled cheese? Well you can’t!
So here is how I went about making it.

I go through these phases in life where I can’t stop thinking about grilled sandwiches. My last serious episode was right around the same time BS’ In The Kitchen was born. There is just something extremely satisfying about a sandwich when you grill it. Take your bread and your ingredients and stack’em into a sandwich and you might have a tasty sandwich. But when you take all those things and fry it in a pan, or grill it in a panini press something magical happens! All those delicious ingredients just meld into this glorious irresistible super sandwich! Crispy bread, gooey cheese, all the toasty goodness that is inside…droool.
