Red Velvet Whoopie Pies

Bob and I are always excited when CTV contacts us about being on their Morning Live TV show. Themed cooking seems to be our TV calling and this time it was all in the spirit of luuuuurve for Valentine’s Day or Singles Awareness Day – however you choose to celebrate it. So what says love better than two perfect little red velvet whoopie pie cookies sandwiched together with the love of a cream cheese filling! You can even oomph up the love factor and cut them into adorable little hearts (*insert ‘awwww’ or ‘gag’ here*) Mmmmm…. either way, red velvet just sounds just delightful to me! It seems like birthday baking is a popular theme here lately on BS’ in the Kitchen, not too long ago we made the Pink Ombre Rose Cake and now we bring you some rich, fudgey, chocolately cupcakes inspired by Fudgee-O cookies! The good man who received these cupcakes loves chocolate chip cookies, among a few other things, but when I found out that he also loves Fudgee-O cookies, I knew a Fudgee-O Cookie Cupcake would have to make an appearance for his birthday! Soft Cream Cheese Sugar Cookies

I have something to admit, last winter I tried making sugar cookies and failed miserably. I’m not talking “just didn’t turn out”, I’m talking “wouldn’t hold a shape, crumbled everywhere and generally tasted like crap”. After that little experience, sugar cookies have made me a bit nervous. Almost egg white nervous….yes, it really was that bad. But what better way to get over your fears then to jump right back in the saddle! I found this recipe online, added my own twists to it then took it for a test drive, and am I ever happy I did! This is now my staple sugar cookie recipe – the cookies are light, soft, fluffy, easy to roll & cut with cookie cutters and have great flavour. I’ve already made them a few times (in the shapes of little walleye fish, semi-trucks, ghosts and even some glittery pumpkins) and they are a hit with the crowds too! Pumpkin Spice Cookies with a Salted Caramel Frosting

It’s hard to believe summer is over and a crisp, warm fall is upon us. With that said, as sad as I am to see the days getting shorter and the air cooling off, I’m happy because it’s given me a bit of incentive to get back into the kitchen. Because it’s fall, it’s time to start playing with all the traditional spices that come with fall – cinnamon, nutmeg, cloves, nutmeg, rich vanilla…. the list could go on and on. When I stumbled upon this recipe last night, I knew I had to make them: Pumpkin Spice Cookies with a Salted Caramel Frosting. There’s been a surge of PB Pie recipes, not only to show support and love for for Jennie and her family, but to also reflect on those special people in your life.
