After working way too many hours this week, I’m finally getting some well deserved R & R this long weekend, at my girlfriends family’s gorgeous cabin in Columbia Lake, BC. Being so busy at work, I’ve been neglecting my blogging duties, and relaxing at a cabin goes hand in hand with having plenty to eat and drink, which just so happens to go hand in hand with a little blogging!

After a friendly neighbour brought over some delicious Taber corn (adding to the already abundant supply on hand), a corn related recipe was definitely in order! Having seen several variations of corn salsa online and in magazines, I decided it was time to whip up my own!

If anyone knows our family, they know we are big into fishing – specifically walleye. Our dad, the leader of the Deutscher pack, was a member of Team Canada for walleye fishing (yes, there is a team Canada…), Board for the Fishing for Tomorrow Foundation and the Saskatchewan Walleye Trail‘s Vice President, it’s safe to say we know how to fish. Anyways, my dad and I went fishing one day and caught some decent sized walleye. It seems like every holiday season and everytime the turkey comes out, we’ve always got some left over, so instantely turkey soup comes to mind. Now, we already have one recipe for Turkey Soup on the blog and I can guarentee there will be more. I don’t think soup is my strong point in my baking/cooking skills, so practice it is!
This version is hearty and perfect for a cold day when you need to warm up. The rice keeps it light and healthy and you can always add your own variety of veggies.

Okay BS’ers… I have a confession, while creeping on Facebook, I saw a friend who recommended this recipe. Now I’m normally not a big fan of trying recipes off the back of boxes, but since I LOVE Old Dutch Popcorn Twist™ (has nostalgic memories of the lake and our cabin), I just had to give this recipe a try:
Today we have a special guest, the woman who made all of this possible…OUR MOTHER! Every year she makes this highly addictive, yet extremely simple Christmas treat known as “Crispix Mix”. I was recently craving chilli, but I’m not the biggest fan of ground beef, so when I stumbled upon some ground turkey at Wal-mart I knew this could satisfy my craving! I wanted to make a chilli that was filling, healthy and had a nice sweet warmth to it, so off into the kitchen I ventured.
A friend recently asked if I could develop a creamy soup, but make it lactose free. I thought it was an interesting challenge, so off to the grocery I went to pick up some ingredients that were lactose free. This post is a continuation from our Caribbean Mango-Apple Pork Roast. We used the leftover pork to make this flavorful, fresh summer soup. Now let me quickly explain something, I hated the name Summer Pork-Corn Soup – it just doesn’t have that nice culinary ring to it. So I did a quick name/language change and called this soup Summer Puerco-Corn Soup, which Puerco meaning pork in Spanish. So much better sounding right BS’ers?!
