Soft Cream Cheese Sugar Cookies

I have something to admit, last winter I tried making sugar cookies and failed miserably. I’m not talking “just didn’t turn out”, I’m talking “wouldn’t hold a shape, crumbled everywhere and generally tasted like crap”. After that little experience, sugar cookies have made me a bit nervous. Almost egg white nervous….yes, it really was that bad. But what better way to get over your fears then to jump right back in the saddle! I found this recipe online, added my own twists to it then took it for a test drive, and am I ever happy I did! This is now my staple sugar cookie recipe – the cookies are light, soft, fluffy, easy to roll & cut with cookie cutters and have great flavour. I’ve already made them a few times (in the shapes of little walleye fish, semi-trucks, ghosts and even some glittery pumpkins) and they are a hit with the crowds too! Charlotte Chantilly | JC100 – Week 9

Well…

Looks like I have been forced to bake again for this weeks Julia Child recipe.

This time it’s the Charlotte Chantilly with strawberries, a wonderfully creamy dessert encased in delicious homemade ladyfingers. As was mentioned on my previous baking effort, which happened to be my first for the blog, I had earned myself a 100% track record by successfully baking the Reine De Saba.

Now maybe my confidence was a little too high this time around, as I successfully completed the difficult part (though not very), of baking the lady fingers, I felt like I was on track for another success… Well folks, I was then graced by my very first minor baking disaster! As I was beating the egg yolks and sugar for the Chantilly, everything was going great. I had beat them until ribbony and pale yellow, then continued beating over not quite simmering water until hot to the touch, then proceeded to the last step of beating them while chilling.

This is where disaster strikes and my brain fails.

Loaded Portobello Mushroom

It’s time for another portobello recipe! This one is real easy and a great healthy platform for all those wonderful things you put on a loaded baked potato (which may not be so healthy!). Baked Potato Grilled Cheese

Behold my latest creation…THE BAKED POTATO GRILLED CHEESE! After the glory that was the Brocolli & Cheddar Soup Grilled Cheese, I began racking my brain for what other wonderful things I could deconstruct into grilled cheese format. Soon enough I had envisioned this piece of grilled cheese heaven! I mean how can you go wrong with fried potatoes, bacon, cheese, sour cream and chives all made into a melty grilled cheese? Well you can’t!

Pesto-Basil Chocolate Cake with a Parmesan Sour Cream Icing

At work we have an Iron Chef Challenge once a month where a group of people cook off and have their dishes judged by a panel of fellow employees. This month’s secret ingredient is…. PESTO! Right away I knew I didn’t want to do something traditional with pesto, so I ventured off to what I know best: Dessert. I made a Basil Chocolate Cake with a Parmesan Sour Cream Cheese Icing and topped it off with some pine nuts and grated parmesan cheese. Cinnamon Bun French Toast

Hey folks!

If you feel like indulging in an amazing, sweet, delicious and caloric breakfast this recipe is for you! Now I took the shortcut here and didn’t actually make the cinnamon buns since I live a block away from “Grounds for Coffee” which apparently has some of Vancouver’s best cinnamon buns, so I had to try them (they were delish!).

The idea of this breakfast was brought to my attention by my girlfriend Megan, who used to order this at Moxie’s years ago until they got rid of the recipe. So after lamenting about this amazing dish, we had to make it!

Ice Cream Sandies

At work we recently hosted a bake sale to help out a fellow employee that was going through some challenging times within their family. The bake sale, 50/50 and donations all went to help this family out. As a new employee this really impressed me and showed how much the company truly is a ‘family’ – the most functional, dysfunctional family, but still a family. For the bake sale I made these yummy little homemade ice cream sandies (aka. sandwiches). Within one day of ¬†fundraising we’ve raised approximately $2,500 for our fellow employee!
