I recently went from having never made fried chicken, to making it four times in about a week and a half, thanks to one of my recent adventures – auditioning for Masterchef Canada! Yup, I’m gonna try and get on a TV show! A Kevin O’Leary inspired recipe, a strange thing you might think? Turns out he provided great inspiration for this tasty dish!
This is what we know about Kevin.
- He can be a little full of himself from time to time…
- He certainly “brings the heat” to hopeful entrepreneurs
- He is all about the “green” (a.k.a $$$$)
- His favourite restaurant in Toronto serves Italian food
- He is a wine connoisseur
Well it’s obvious isn’t it?! We need to make an appetizer that’s full of itself, can handle the heat, is green, perhaps Italian, and maybe even has some wine in it! So it came to be, The Kevin O’Leary, a.k.a Deep Fried Ravioli Stuffed with Spinach & Ricotta, served with a Spicy Tomato Sauce!

I should also mention, I didn’t make these with the intention of posting them on the blog, but after it was all said and done, I had to share the story, so I snapped some photos with my iPhone. (Thank god I didn’t have my actual camera on me! You’ll find out why, soon enough)
What began as an exciting foray into the cuisine of Spain, became a harrowing tale of disaster and determination, in what has become the scariest thing I have ever cooked.

After making “The Canadian”, I had an abundance of pepperoni and mozzarella cheese leftover. In my efforts to use the rest of it, I had a stroke of genius, creating Pepperoni Stuffed Mozzarella Sticks! Having never made homemade mozzarella sticks, I thought stuffing pepperoni in them might not be the smartest move, but screw it! I did it anyways! While the process of making them was a little tedious, the end result was delicious! Here’s how it went down!

I first saw fried pickles awhile back and thought, what a strange, but interesting combination that was. Since then and more recently my eyes have come across more fried pickles and figured what the heck, they would be easy to make and I have all the ingredients so let’s try ’em! After texting Carlene and telling her about the next blog recipe I was going to make, it became clear we share the same brainwaves. She responds “I just bought all the ingredients to make those!”, well sister, looks like I beat you to the punch! BUT maybe we will get lucky and she will do a bit of a twist and share her recipe too!
Let’s get to this recipe. It was strange but tasty (as evidenced by the empty bowl I found myself with afterwards…).
