I’ve been all about making food with fun names these days. Blueberry Cla-foo-tee, chicken catch-a-tory, they are fun to say and even more fun to eat! As part of our back-to-school special for CTV Morning Live, Carlene and I were tasked with making easy, budget friendly meals for students. Carlene settled on making the always tasty Vietnamese cold rolls; an easy to make, inexpensive, and light meal. Taking the alternate route, I went with a comfort classic that’s easy to make and easy on the budget!

I can’t believe it’s September already. Where did this summer go? I’m not sure if it was having the snow stay into early May or just being so busy, but this summer seemed to wiz right by. With September here in full force, so is school. Yup that’s right – back to the books, the late night studies, copious amounts of coffee and the ever growing wealth of knowledge. When CTV Morning Live contacted us about doing another segment, this time anchored around budget and student friendly meals, Bob and I agreed to the challenge (the video of the segment is posted below – tune in to see who received the “dunce” cap). Bob made some flavour packed chicken cacciatore and my rival dish was one of my favourite foods: Vietnamese cold rolls. Let’s get to my recipe (which by the way costs an average of $2.49 CAD for a serving of four cold rolls).

Guilty confession: I made this recipe two years ago…blog posts don’t get better with age, so don’t ask me why I haven’t posted it until now! I had all of the pictures edited and everything, all I needed to do was type up the recipe and hit publish! But that’s all in the past now, so let’s just enjoy some duck curry!
This recipe initially piqued my interest because of the main ingredient: duck. When cooked properly, duck is delicious, and thanks to my uncle who is a hunting guide, my family has a constant supply of free duck! This curry was very flavourful and had just the right amount of heat!

Anybody else out there enjoy the awkward and hilarious online cooking show made by food blog Bon Appetempt? About two months ago, I was going on a 3AM Vimeo food video binge when I came across Bon Appetempt’s “30-Minute Meal?” video. Shortly after discovering Bon Appetempt, I began watching their videos and not so shortly after, I had finished all of them. They are awesome. Go see for yourself!

Made a lobster roll? Still got leftovers? Don’t like lobster rolls? Love pasta? Well then this dish is for you! Another easy recipe utilizing leftover (or fresh) lobster. Given that i’m not a huge fan of really rich pasta sauce, I have made a butter free sauce, allowing the lobster and parmesan cheese to provide plenty of rich, hearty flavour!

Every time I cook a recipe from Bon Appetit, I am consistently impressed with how good it is, and this one is no exception! What a great trio of flavours this dish had. At it’s base there was rich, flaky salmon with a beautiful pan-seared crust, on a bed of hearty collard greens, finished off with a side of cool, refreshing Radish Raita. Having never actually eaten collard greens, and having seen them recently at the local Sobey’s, my interest was peaked when I came across this recipe in Bon Appetit’s March issue.

After a perfect afternoon of ice fishing (okay well not perfect-perfect, because we didn’t even get a single bite and almost hit a deer with the truck – literally missing it by centimeters, but it was perfect in the sense that we got to spend some time enjoying the great Canadian outdoors)…. okay back on topic, after icing fishing, the Good Man and I headed home for a lovely prepared dinner thanks to our good friend, the slow cooker (aka. the crock pot). This recipe for pulled pork is sweet, savoury with a bit of a kick and most of all, the meat is tender and delicious! I have been dreaming about making Porchetta like the one from Vancouver’s Meat & Bread (an amazingly good sandwich shop), but before I bought all the ingredients, I wanted to test this recipe first. After modifying it a bit for a small pork loin, I can happily say the seasoning is definitely similar to Meat & Bread’s, and with crackling and all, this would be pretty amazing!

Here we go with another grilled cheese! This recipe was actually the sandwich I was originally going to do for our CTV Morning Live cooking segment before they suggested a game day theme! No problems switching things up on our end, it just means extra blog posts! Since we were going to do holiday inspired recipes, this is what I created. Not only does it get you ready for Christmas, it gives all our American followers more leftover ideas!
