Barbecue + Chicken + Fresh Herbs = Magic. I’ve never been much of a mathematician, but that is one equation I can wrap my head around! Fall is coming waaay to quick in Saskatoon and I’m not happy about it! While I love Fall and the beautiful colours it brings, sadly, it means barbecue season is almost over, and that, my friends, is a time of great sadness. In the spirit of summer, I encourage you to go forth, spatchcock a chicken (yes that’s right), rub it with delicious chimichurri, and barbecue that thing whole! At least that’s what I did here.

In the spirit of keeping things fresh, I wanted to try a recipe that I’ve always heard about, but never made before – Chimichurri! It’s a blend of fresh herbs, red wine vinegar, and olive oil, and it’s absolutely delicious! Carlene and I have finally made our re-appearance together on CTV, whipping up barbecue recipes for August long! Steph from CTV made a special request for Beer Can Chicken, and left us up to decide what else we wanted to do, so Carlene settled on Ice Cream Tacos! It’s actually a bit absurd that this is the first time doing Beer Can Chicken on the blog, as it’s something our family has been doing for years and years, even before the whole Beer Can Chicken craze took place!

I know, I know, this isn’t technically “Beer Can” chicken, since I used Snapple, but the concept is the same! In fact, beer really isn’t necessary to make “Beer Can Chicken”, using other soda’s, or water infused with herbs, or tea, can add a nice subtle flavour to your chicken, so feel free to experiment!

After years (and years, and years…) of reaping the benefits of my mother’s gardening efforts, I finally started a garden in my own backyard this year. Needless to say, I have learned how much work goes into building a garden, and while it has been hard work, it has also been extremely rewarding!  Naturally, having a garden has influenced on my cooking, with all the fresh herbs and vegetables just a few steps out my back door! Along with gardening, I have started making sourdough bread quite frequently (at least once a week), which has resulted in a lot of bread sneaking into my meals as well!

That is where this delicious creation comes along. The other week after weeding the garden, I realized I hadn’t eaten for quite some time, so as per usual, I made a quick fried egg sandwich. Of course, with all the fresh bread, herbs, and vegetables, I had to incorporate some into my sandwich! The results were quite delicious, and it got me thinking about making it again, but classing it up a bit.
