After years (and years, and years…) of reaping the benefits of my mother’s gardening efforts, I finally started a garden in my own backyard this year. Needless to say, I have learned how much work goes into building a garden, and while it has been hard work, it has also been extremely rewarding!¬† Naturally, having a garden has influenced on my cooking, with all the fresh herbs and vegetables just a few steps out my back door! Along with gardening, I have started making sourdough bread quite frequently (at least once a week), which has resulted in a lot of bread sneaking into my meals as well!

That is where this delicious creation comes along. The other week after weeding the garden, I realized I hadn’t eaten for quite some time, so as per usual, I made a quick fried egg sandwich. Of course, with all the fresh bread, herbs, and vegetables, I had to incorporate some into my sandwich! The results were quite delicious, and it got me thinking about making it again, but classing it up a bit.

When I first saw this recipe in Bon Appetit, it was so strange, I couldn’t not try it. I showed it to my room-mates, Celeste and Ross, and we were all intrigued enough to test it out.

Of course, we couldn’t just leave the recipe alone, so we added a fried egg, and the results were quite amazing! After eating it, we realized this toast actually made perfect sense! It had a lot of flavours typically used in Asian cuisine, with its use of peanut, sriracha, green onion, cilantro, and lime.

¬†Although this isn’t necessarily a traditional Eggs Florentine (as it doesn’t have any sauce to go with it), it does stay true to “Florentine” which is used to describe a dish with spinach. Regardless of semantics, this was one tasty combo! I mean, I was expecting it to be good; crunchy hashbrown topped with sauteed spinach, feta cheese and topped with a fried egg, running it’s yolk all over the place. You’ve got a win right there. But this was just awesome! All the flavours came together so well. The textures complemented each other, the saltiness of the feta went great with the spinach. I will definitely be making this again!
