Apple Ginger Chutney (Canned)It’s hard to believe fall is already here with the trees transforming into hues of golden yellow, burnt red and rusted orange. While fall leaves some feeling a bit blue, knowing that summer is ending and winter is only around the corner, but for me – I LOVE it! Cool but still warm temperatures, the ability to relish in the last moments of the summer sun, the fashion (boots, boots, boots! Can’t forget the cozy scarves and sweaters) and not to mention great fishing, and something new for me this year – hunting! Another fall bonus is the harvest season – veggies and fruits galore!!! This year a friend shared some beautiful Saskatchewan grown apples with me, along with an apple pie and crisp that she and her mom made (This crisp was probably the best crisp I’ve ever had. The caramel like coated apples had me at first bite). You seriously can’t get a person that’s more kind and generous as she is! I have a “bad blogger” moment to admit to: Before Christmas time I made roughly 150+ perogies and ate them all… yes all of them… k well not all of them because I did share a few dozen with friends and family… but the large majority….. without taking a single picture of them or blogging them. Now full of blogger shame, this past weekend I decided to whip up another batch. However, I must be clinically insane because I’ve made over 300 perogies with this ginormous batch. So everyone can expect one thing: more perogy recipes will be appearing on the blog. Who knows – maybe I will be the Perogy Princess while Bob is the Grilled Cheese King. Shrimp Pho

While other people crave chocolate, fast food or other types of sinful dishes when they are sick or stressed out, mine is definitely Vietnamese food – specifically cold rolls and pho. I love the light and fresh flavours that leave you feeling full and happy. I usually order it from my favourite restaurant in town, the Asian Wok, but tonight I decided it was time to learn to make my own – especially with finances being strict with the new house and being sick and not wanting to be out in public….
