After making Julia Child’s Rolled Omelette several weeks ago for the JC100 celebration, I’ve been using that high-heat method to cook my eggs ever since. It’s super quick and results in the amazing soft and creamy eggs. So one day as I’m making eggs, I happened to have goat cheese in my fridge and chives in my freezer (chives freeze great if you didn’t know!). Now I love the combination of eggs and chives, as well as goat cheese and chives, but it occurred to me that I had never put all three together. Fortunately that problem didn’t last long. Soon after, I was chowing down on the most delicious, creamy and flavourful scrambled eggs I have ever made! If you’re a goat cheese lover like me you NEED to make these!

To continue on with the beet recipes, here is a super easy, light, and tasty salad I made a couple weeks ago, since blood oranges were in season! If you haven’t tried a blood orange, you need to! They are really unique looking and taste great; I would describe their flavour as a orange/grapefruit hybrid.

I made this grilled cheese a while ago and just haven’t gotten around to posting it, but since it’s NATIONAL GRILLED CHEESE DAY (Probably the best day ever?!?) I couldn’t not post a grilled cheese! Now this one is quite different from anything I have done in the past, with my super hearty and savoury grilled cheese such as the Baked Potato Grilled Cheese. I am personally more a fan of those ones, but I enjoyed switching it up with this one! What are your guys thoughts?

Let me start off by saying THIS SANDWICH IS AMAZING!! Seriously. I didn’t know what I was in for when I made this creation, but i’m sooo glad I did! With this being the last of my mini portobello mushroom series, I will definitely be cooking with them more often. The combination of the creamy goat cheese, meaty portobello, sautéed spinach and smoky bacon all comes together so perfectly in this sandwich! Writing about it makes me want another one!

Before trying to make these at home, I was always a bit confused why people would want to eat lettuce wraps – with no carbs, sauces or spices how could these things be tasty? Two friends from the University of Alberta recently moved to Saskatoon to take their Masters of Professional Accounting program. As a welcoming gift, I decided to make them their first meal in Saskatoon. I wanted something that was easy to make (so they could remake it), but will also satisfy their manly hunger – well for one at least, the other one I was warned just likes rice & chicken ;). On the hunt for a recipe that would meet those needs, I thought how great would mini focaccia bread pizzas be?! I ended up using this great recipe from the Bare Foot Kitchen Witch for her Summer Focaccia. Just make sure to take some time to make the focaccia, as it takes a while.
