Being new to collard greens, I am quite the fan, the large, hearty leaves make a great vegetable side dish, or a great vehicle for other ingredients! Although I kind of failed at this being a healthy recipe (see: bacon & cheese), using a collard green as a wrap instead of your typical tortilla style wrap, is a great low carb alternative! Of course if you want deprive yourself, you can take out the bacon and cheese, making it uber healthy! I say spoil yourself though, put the good stuff in!

I tasted this salad the other night while out for dinner at McNally Robinson’s restaraunt “Prairie Ink” (a great local place with great ambiance and occasionally vibrant live music) and decided that I had to try making it at home.
