Being in the mood, I picked up some deli meat, and went about creating something with what else I had on hand. What needs to be said about this one? They have chili cheese fries, chili cheese dogs, chili cheese nachos, so the next logical step (at least for me) is a Chili Cheese Grilled Cheese! Plenty of hearty chili, loads of cheese, sandwiched between two buttery slices of bread.

Many of my grilled cheese creations stem from deconstructing a traditional dish, and turning it into a sandwich format (because sandwiches are simply the best!). For this one, I took my inspiration from the classic Chicken Cordon Bleu, a dish where chicken is stuffed with ham and swiss cheese, and often covered with a creamy sauce. Now you can enjoy this savoury meal between your fingertips instead of with fork and knife!

Well folks, my intentions were good, I really wanted to focus on posting more regularly, and then I failed!! I have been doing a fair amount of cooking and taking pictures for the blog, but I just haven’t taken the time to actually blog the recipes! This all changes right now, because it’s that time of the year again! NATIONAL GRILLED CHEESE MONTH! Whenever “ooey gooey, runny egg yolk” is involved in a recipe, say no more! I WANT IT! Not to mention, bacon AND cheese! Like seriously, what am I doing to myself?! Now I was having a bit of an internal struggle with this grilled cheese, deciding, hmmm should I put a hashbrown in it, or would that be too much? After all these epic grilled cheeses, I was leaning towards excluding it, I mean how much can my body take!?! Of course I consulted with Carlene, and she insisted I put a hashbrown in it…well I guess that’s part of a complete breakfast right!? Clearly she doesn’t care about my health…

Yesterday was wine and cheese, and today I present another classic pairing: tomato soup and grilled cheese! Sometimes the simplest pairings are the most delicious, such is the case with this grilled cheese. Gooey cheese and a layer of concentrated tomato soup spread on each slice brings that classic flavour right into the palm of your hands. No spoons needed!

Wine and cheese.
Makes sense right? Everybody knows it, so WHY has nobody made a Wine & Cheese Grilled Cheese before?!?!? As I’m writing this, I decided to give it a Google, and found nothing! I like to think of myself as a bit of a grilled cheese trendsetter, so this pleases me greatly! Now that I’ve let the cat out of the bag, start making these!! Seriously, the options are endless. Take your favourite wine and cheese pairing, give the wine a quick reduction, spread it, stack that cheese, grill it and DEVOUR IT! But please be refined in your devouring, this is wine and cheese remember.
