Mmmm mmmm mmM! What a grilled cheese! Gooey cheese, crunchy potatoes, all my favourite parts of scalloped potatoes, in my favourite kind of sandwich! I gotta say potatoes certainly do go well in grilled cheese sandwiches (see Baked Potato Grilled Cheese). Now for me, the best part of scalloped potatoes is the crunchy potatoes you get on the side and the top, so that’s what I was looking to emphasize (and boy did I ever!). If you love the creaminess of scalloped potatoes, all you have to do is either, cook the potatoes less, so they’re not as crunchy, or boil down a quick creamy sauce with milk, butter, and flour to go in the grilled cheese. I almost want to make another right now just to try a saucier version!

Another killer grilled cheese to report here! After buying some tuna for another recipe, it dawned on me that I could take the classic tuna melt, give it my signature twist and turn it into an amazing grilled cheese! And oh boy, was it delicious! Gruyere and cheddar holding it down on the outside, mixed with salty dill pickle, crunchy celery, a bite of fresh dill and green onion here and there, all surrounding the main attraction: Seared Tuna. Toss out your dry flaky canned tuna, there is a new sheriff in town! You’re still getting your beloved flaky tuna, but now it’s nice and moist, flaking off from around the juicy, tender, rare center of your tuna steak. Talk about gourmet grilled cheese!

Lobster grilled cheese…really? YES. Rich meaty lobster chunks, surrounded by melting cheese, and toasty buttered bread…this was one rich, tasty sandwich! The idea for this one stemmed from thought of lobster mac & cheese which seems to be fairly popular, although I have never had it! That may need to change.

Wine and cheese.
Makes sense right? Everybody knows it, so WHY has nobody made a Wine & Cheese Grilled Cheese before?!?!? As I’m writing this, I decided to give it a Google, and found nothing! I like to think of myself as a bit of a grilled cheese trendsetter, so this pleases me greatly! Now that I’ve let the cat out of the bag, start making these!! Seriously, the options are endless. Take your favourite wine and cheese pairing, give the wine a quick reduction, spread it, stack that cheese, grill it and DEVOUR IT! But please be refined in your devouring, this is wine and cheese remember.

Let this mark the beginning of our month long ode to the almighty Grilled Cheese! As part of National Grilled Cheese Month (possibly the best month ever), we are going to be posting a new grilled cheese EVERY DAY, yes you read that right! Every day tune-in to BS’ in the Kitchen and treat your visual tastebuds to some amazing new grilled cheeses (and THEY WILL be amazing!).
To start things off I present the Smoked Salmon Bagel Grilled Cheese, all the classic flavours of a smoked salmon bagel, with some Gruyere cheese, grilled to perfection! And when I say perfection, I mean it! This sandwich/bagel was amazing! I don’t even like smoked salmon that much, but it paired really well with the Gruyere cheese, I couldn’t get enough! You get the crisp exterior of the bagel, a smooth, creamy layer of cream cheese, a subtle bite from the red onion mixed in with the smokey, nutty flavour from the salmon and Gruyere. Then every couple of bites, there is a burst of pickled-vinegary flavour from the capers and a fresh bite of dill. The ingredients balanced each other so well and made for one unreal grilled cheese!

I must admit, I was expecting this weeks recipe to be the popular boeuf bourguignon, but maybe that will be next week for the big finale! Of course, receiving a recipe with scallops was no disappointment as I LOVE seafood and scallops are no exception! As usual the recipe did not disappoint, making for a rich and delicious appetizer that left me craving more (as good appetizer’s should!).

It has finally arrived…the infamous Souffle!
I knew at some point during JC100 this recipe was going to show up in our inbox, and though slightly terrified, I was very excited to try my hand at it! Now I’ve gotta have a little sympathy for the poor old souffle, it’s gotten a pretty bad rep as being a difficult dish to make, but it really is quite simple and I can happily say mine turned out wonderfully! (Admittedly, I have never had a souffle, but after researching a little I think the flavours and textures were spot on!)

Introducing the French Onion Soup Grilled Cheese!!
I have had this idea for quite some time and was originally going to make it when the Caramelized Onion & Mushroom Brie Grilled Cheese was birthed, as I had bought the ingredients, but couldn’t find Gruyere cheese at my grocery store. With my afternoon off and Gruyere in my fridge, I knew this was happening! Now I don’t expect everybody to make French Onion Soup every time they want this grilled cheese (which could be often!), so I whipped this up separately even though I made my French Onion Soup at the same time. Of course if you did make French Onion Soup, you could just take some onions from that and make this grilled cheese!

Lately I have been quite busy with work, as well as some volunteer activities, and having exhausted all my archived blog posts, I was really hoping to find some time to make some blogworthy food! Fortunately/unfortunately we got a big snowstorm in Saskatoon, which meant things at work would finally slow down for a day or two, meaning I would probably get my afternoon off! Sure enough I did and I knew exactly what I was going to do! So after leaving work, I stopped off at the grocery store and stocked up on various ingredients.
