If anyone has ever had a mentor, they know they are completely invaluable and probably the best thing since sliced bread (Capital G, L & K if you’re reading this – this means you!!). I’ve never really had a cooking mentor (if you don’t count my grandma), but I’ve recently met one. But he’s more like an Iron Chef – always pushing innovative ideas for food and makes you want to cook fancy food all the time. So this post is for you Beets – or is a Iron Chef CB a better blog name? Either way, let’s get to these chicken nuggets!
I tasted this salad the other night while out for dinner at McNally Robinson’s restaraunt “Prairie Ink” (a great local place with great ambiance and occasionally vibrant live music) and decided that I had to try making it at home. After a quick trip to Sobey’s, I was armed with my ingredients and ready to recreate this delicious, fresh and light salad.
If anyone makes their own dressing, they know they’ll never go back to buying it bottled! And the best thing about homemade dressing or vinaigrettes? It’s INCREDIBLY easy.
Today I utilize another Christmas gift.

Before I start this post I have to say that I recently discovered something that is more powerful than google: mothers. Yes, that’s right, mothers. While in the city-wide hunt for gelatin to make the homemade marshmallows, I came across pectin. Some would say pectin would be a suitable sub for gelatin, however, the mother said no and she was right…
I saw these Make & Takes blog and was instantly inspired to make them as they looked cute and delicious! The bottom is a creamy fudge that dissolves into the depths of a warm cup of milk (or soy/almond milk for those lactose people out there) and the marshmallow can be removed to float on top or stirred in for extra sweetness! Let’s get to the two-tiered recipe.
