Caprese Egg Sandwich

Our Walmart here is Saskatoon recently got converted into a Super-Walmart and long behold they had kale! Before making these chips, I never tried Kale, but I can let you know that I will be buying it again soon. These kale chips are a great way to pack in some crunch of potato chips, but load up on some great vitamins that the kale has like beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium and even has anti-cancer agents.
