I’m stepping out of my usual ooey gooey, melty grilled cheese territory with this one! It’s a veggie packed, crunchy, creamy grilled cheese, and it’s delicious! A traditional greek salad, in sandwich form! Since feta is a more solid cheese, you don’t get that stringy meltyness from it when it heats up, instead it retains it’s shape for the most part, but gets extra creamy, which is equally delicious and a nice change! I was slightly concerned about how well the cucumbers would hold up under the heat (soggy cucumbers are gross!), but they remained crunchy, taking on a more pickle like crunch, rather than the cucumbers usual fresh crunch.

Time is flying by with the Julia Child 100 year celebration and it’s already onto week 4! This time with the fancy and filling Salad Nicoise [nee-SWAHZ]. With each assignment Carlene and I receive, we try to stay true to the recipe, but add a little extra flare if possible! This week is no exception. Instead of piling a bunch of ingredients into a bowl, we wanted to use some great fresh tuna and a different plating style to class things up a bit!

After all of your pumpkin carving, save the seeds! Clean them, let them dry completely then gently toss them in EVOO, juice of half a lime, lots of sea salt and fresh cracked pepper and roast in a 400°F oven for 20-30 minutes. Be sure to toss about every 5 minutes while roasting them. Cool off & enjoy!

A good friend at work always makes Greek Salad and I go all kindergarten on her and usually end up trading some of my lunch or flat out stealing some of her delicious greek salads she always makes. I recently was able to share a lovely meal with a friend that was filled with delicious wine (Layered Caked wine to be exact – appropriate for the blog don’t you think?), three different colours of potatoes, an array of other root vegetables followed up with a roasted rosemary lemon chicken with a side of garlic bread and tomato soup.
