It’s that time of the year… Squash season!

Thanks to my mother planting copious amount of spaghetti squash this year, I have been racking my brain, trying to think of different ways to use that delicious vegetable! In the past, I have always kept it quite simple, roasting the spaghetti squash, then mixing in some diced tomato and onion, which makes a perfectly delicious meal. But this time I wanted to really take advantage of the squash and the fact that it makes a perfect little boat for other ingredients when cut in half.

Taaake me out to the baaalll gammee, taake me out with the crowwd… I think that’s what my tastebuds were singing as I was eating this one. Talk about flavour! This one had loads of it! Hotdogs, mustard, ketchup, relish, fried onions, and loads of cheese! I think I need to go run around the bases more than a few times after this one! Carlene got the bases loaded with this one, prepping all the ingredients, and I hit the home run and fried it up!

It’s filled with all the delightful ingredients perogies are made from – potatoes, cheddar cheese, green onions and sour cream and then made even better by being assembled in a grilled cheese. I don’t want to brag too much but this GC was seriously awesome! I think Bob should watch his back…..there is a new Grilled Cheese Artist in town! Let’s get to this Ukrainian inspired recipe..

Being new to collard greens, I am quite the fan, the large, hearty leaves make a great vegetable side dish, or a great vehicle for other ingredients! Although I kind of failed at this being a healthy recipe (see: bacon & cheese), using a collard green as a wrap instead of your typical tortilla style wrap, is a great low carb alternative! Of course if you want deprive yourself, you can take out the bacon and cheese, making it uber healthy! I say spoil yourself though, put the good stuff in!

Roasted Corn Guacamole

After working way too many hours this week, I’m finally getting some well deserved R & R this long weekend, at my girlfriends family’s gorgeous cabin in Columbia Lake, BC. Being so busy at work, I’ve been neglecting my blogging duties, and relaxing at a cabin goes hand in hand with having plenty to eat and drink, which just so happens to go hand in hand with a little blogging!

After a friendly neighbour brought over some delicious Taber corn (adding to the already abundant supply on hand), a corn related recipe was definitely in order! Having seen several variations of corn salsa online and in magazines, I decided it was time to whip up my own!

Ratatouille | JC100 – Week 11

Ratatouille!! Finally!

Now maybe Ratatouille doesn’t need that many exclamation marks, but I was excited to make it and finally find out what it tastes like! After watching (and thoroughly enjoying) the Pixar film, I’ve always been curious what it was like! Well I wasn’t disappointed! All the vegetables melded together into some wonderful flavours. My only issue with this dish was the texture, but to combat some of the “mushiness” I chopped up some more fresh peppers and added it. This gave it another layer of flavour and added that much needed crunch (in my opinion).

Portobello Mushroom & Avocado Burger

I’ve been designing this burger in my head for a while and after running a 10km race this morning, I decided that it would be a great choice to make this healthy burger – you know, to stay with the healthy kick and all. It’s easy to make which is also a great choice. All together, the flavours really compliment each other – the portobello mushroom adds good depth and flavour, while the avocado adds a smooth buttery flavour.
