Tomorrow (or I guess today once this post is published), I will be making my way to New York for the first time, where I will most certainly be enjoying a slice of pizza or two! In the spirit of New York and pizza, I felt this recipe that has been hanging out in my blog archives for quite some time needed to be shared!
This awesome pizza uses Jim Lahey’s amazing “no-knead” pizza dough, making it ridiculously easy to make! You basically just put everything in a bowl the night before, and voila, the next day it has become an amazing pizza dough! Now that’s my kind of recipe! Of course, I had to add a little bit extra to it, because following a recipe to the tee is never as much fun!

Now I know some of you guys(/girls) will disagree with me here, but often times I feel the need to expand my cooking/blogging repertoire by focusing on more non-sandwich dishes. Of course the pull of the almighty sandwich is a strong one, and soon enough, I find myself relapsing with yet another grilled cheese recipe on my hands. Fortunately, my Grilled Cheese support group (a.k.a our faithful readers!), make me realize there is no shame in creating one more grilled cheese!

I’ve been feeling guilty lately.
Guilty because it has been A LOOONG time since i’ve gone to the gym (which I used to do regularly), and guilty because my blogging output has been pitiful the last couple months.
With big intentions to go to the gym today, I got home from work to find this delicious looking focaccia bread on my counter. This is where my resolutions fail me.
Food blogger guilt takes over.

We were recently contacted by Cookin’ Greens to create a unique and tasty using some of their fresh frozen vegetable mixes. Bob & I decided that creating a veggie packed BBQ pizza would be the best option! Now here is something cool about Cookin’ Greens which I really appreciate: all their frozen veggies (chopped kale, chopped spinach, chopped rapini, Designer Mix and the Athlete’s Mix) are frozen within six hours after being freshly farm picked, then are double washed, double blanched, chopped and flash frozen to seal in the maximum amount of nutrition and flavour. Two friends from the University of Alberta recently moved to Saskatoon to take their Masters of Professional Accounting program. As a welcoming gift, I decided to make them their first meal in Saskatoon. I wanted something that was easy to make (so they could remake it), but will also satisfy their manly hunger – well for one at least, the other one I was warned just likes rice & chicken . On the hunt for a recipe that would meet those needs, I thought how great would mini focaccia bread pizzas be?! I ended up using this great recipe from the Bare Foot Kitchen Witch for her Summer Focaccia. Just make sure to take some time to make the focaccia, as it takes a while.
