Given the popularity of this wrap Carlene made a while back, I knew I had to do a grilled cheese version of it! Well folks, it’s popular for a reason! This was so delicious! Meaty portobello mushroom, sweet roasted red pepper, fresh basil, and all that creamy goat cheese! I can still taste it! This one takes a little more prep work since you have to roast the red pepper, and portobello mushroom, but that just means tossing them in the oven for 30 minutes while you do other things!

Portobello Mushroom & Avocado Burger

I’ve been designing this burger in my head for a while and after running a 10km race this morning, I decided that it would be a great choice to make this healthy burger – you know, to stay with the healthy kick and all. It’s easy to make which is also a great choice. All together, the flavours really compliment each other – the portobello mushroom adds good depth and flavour, while the avocado adds a smooth buttery flavour. Spinach, Bacon & Goat Cheese Portobello Mushroom Sandwich

Let me start off by saying THIS SANDWICH IS AMAZING!! Seriously.  I didn’t know what I was in for when I made this creation, but i’m sooo glad I did! With this being the last of my mini portobello mushroom series, I will definitely be cooking with them more often. The combination of the creamy goat cheese, meaty portobello, sautéed spinach and smoky bacon all comes together so perfectly in this sandwich! Writing about it makes me want another one!

Loaded Portobello Mushroom

It’s time for another portobello recipe! This one is real easy and a great healthy platform for all those wonderful things you put on a loaded baked potato (which may not be so healthy!). I’m pretty sure you could put sour cream, bacon, chives and cheese on anything and it would taste awesome, so this was a no-brainer!
