Here is a recipe I created the same day I made the delicious Smoked Salmon Bagel Grilled Cheese. Given that I wanted to keep things grilled cheese focused during April, I have kept from posting it until now! Although for anybody following me on Instagram, you might remember seeing it!

As I have previously mentioned, I’m not crazy about smoked salmon, often finding it far too pungent, but it’s a whole different story here! Well balanced with a number of other ingredients, namely fresh dill, capers and sour cream, the smoked salmon enters into a beautiful union of flavours!

Mmmm mmmm mmM! What a grilled cheese! Gooey cheese, crunchy potatoes, all my favourite parts of scalloped potatoes, in my favourite kind of sandwich! I gotta say potatoes certainly do go well in grilled cheese sandwiches (see Baked Potato Grilled Cheese). Now for me, the best part of scalloped potatoes is the crunchy potatoes you get on the side and the top, so that’s what I was looking to emphasize (and boy did I ever!). If you love the creaminess of scalloped potatoes, all you have to do is either, cook the potatoes less, so they’re not as crunchy, or boil down a quick creamy sauce with milk, butter, and flour to go in the grilled cheese. I almost want to make another right now just to try a saucier version!

Нічого собі, що все дуже смачно! Whoops… sorry, this grilled cheese was so delicious in a traditional fashion that I started to speak ukrainian! It’s filled with all the delightful ingredients perogies are made from – potatoes, cheddar cheese, green onions and sour cream and then made even better by being assembled in a grilled cheese. I don’t want to brag too much but this GC was seriously awesome! I think Bob should watch his back…..there is a new Grilled Cheese Artist in town! Let’s get to this Ukrainian inspired recipe..

Whenever “ooey gooey, runny egg yolk” is involved in a recipe, say no more! I WANT IT! Not to mention, bacon AND cheese! Like seriously, what am I doing to myself?! Now I was having a bit of an internal struggle with this grilled cheese, deciding, hmmm should I put a hashbrown in it, or would that be too much? After all these epic grilled cheeses, I was leaning towards excluding it, I mean how much can my body take!?! Of course I consulted with Carlene, and she insisted I put a hashbrown in it…well I guess that’s part of a complete breakfast right!? Clearly she doesn’t care about my health…

Anyone who buys those bags of frozen french fries is just cheating themselves. Especially if you have potatoes in your cupboard. These things are so simple, so delicious, and just look at how beautiful they are! Your frozen potato sticks don’t come close! Grab a russet potato, slice it up, bake it and feel the guilt wash away as you eat these non-deep fried homemade beauties (and then feel guilty as you realize you just ate a ton…oops!).  Although this isn’t necessarily a traditional Eggs Florentine (as it doesn’t have any sauce to go with it), it does stay true to “Florentine” which is used to describe a dish with spinach. Regardless of semantics, this was one tasty combo! I mean, I was expecting it to be good; crunchy hashbrown topped with sauteed spinach, feta cheese and topped with a fried egg, running it’s yolk all over the place. You’ve got a win right there. But this was just awesome! All the flavours came together so well. The textures complemented each other, the saltiness of the feta went great with the spinach. I will definitely be making this again!

Buffalo Chicken Stuffed Potato Skins

 I feel pretty lucky that I have some really great friends. The majority of us met in high school,  some of us have even been friends since elementary school, and have been through thick and thin together. I’d say it’s pretty special to have friendships that have lasted so many years! With some of us being married, having busy careers and even a few of us having kids, we don’t get to see each other as much as we used to, but when we do, crying from laughing so much is a guarantee! We’re also all foodie junkies and love to get together for potlucks and drinks.
