Although this isn’t necessarily a traditional Eggs Florentine (as it doesn’t have any sauce to go with it), it does stay true to “Florentine” which is used to describe a dish with spinach. Regardless of semantics, this was one tasty combo! I mean, I was expecting it to be good; crunchy hashbrown topped with sauteed spinach, feta cheese and topped with a fried egg, running it’s yolk all over the place. You’ve got a win right there. But this was just awesome! All the flavours came together so well. The textures complemented each other, the saltiness of the feta went great with the spinach. I will definitely be making this again!

I feel pretty lucky that I have some really great friends. The majority of us met in high school, some of us have even been friends since elementary school, and have been through thick and thin together. I’d say it’s pretty special to have friendships that have lasted so many years! With some of us being married, having busy careers and even a few of us having kids, we don’t get to see each other as much as we used to, but when we do, crying from laughing so much is a guarantee! I have been wanting to try making stuffed skin chicken breasts for several months now, and had purchased the chicken, put it in the freezer, but never gotten around to making it until now. Since I had just gotten back from Jamaica, my fridge was a void of empty space, and so began the raid of my freezer. After pulling out the chicken, I scavenged through my fridge and pantry, and was able to pull together some pretty wonderful ingredients, coming up with this tasty recipe! Not bad if I do say so myself!

It is now week 3 of the 100 year celebration of Julia Child and they’ve hit us with a doozy! Well not really, but this one did certainly take more time than the Omelette Roulee of week 1 which was in and out of my HOT pan in a minute and a half! (That’s my kind of recipe). This week I was faced with Coq au Vin, which is essentially “Chicken in Wine”. I knew this would be more challenging for me, not because it was difficult to prepare, but because I don’t like following recipes, but I stuck it through and it was a success!

Let’s start off by saying WOOOOOOWWW. This latest grilled cheese creation is absolutely amazing and dare I say the best one yet?? First off, I grilled it on the barbecue, so that alone is a game changer, and second, it contains amazing ingredients from my previous grilled cheeses like potatoes, chives and caramelized onions, but adds juicy steak and provolone cheese into the mix! Seriously, this is like a steak sandwich on steroids! The idea came about while at work, as I was discussing my next grilled cheese prospect with my co-worker and friend of many years, Brett T. I had decided my next creation was going to be a barbecued grilled cheese, when Brett threw it out there…STEAK & POTATO GRILLED CHEESE.
The room was silent.
Not really…But I knew this was going down as soon as possible. The wheels started turning as I began envisioning how this behemoth of a grilled/BBQ’d cheese sandwich was going to come together, here is what I came up with.

It’s time for another portobello recipe! This one is real easy and a great healthy platform for all those wonderful things you put on a loaded baked potato (which may not be so healthy!). I’m pretty sure you could put sour cream, bacon, chives and cheese on anything and it would taste awesome, so this was a no-brainer!

Behold my latest creation…THE BAKED POTATO GRILLED CHEESE! After the glory that was the Brocolli & Cheddar Soup Grilled Cheese, I began racking my brain for what other wonderful things I could deconstruct into grilled cheese format. Soon enough I had envisioned this piece of grilled cheese heaven! I mean how can you go wrong with fried potatoes, bacon, cheese, sour cream and chives all made into a melty grilled cheese? Well you can’t!
