Walleye Rice Cakes | Leftover Makeover

One of my “fridge struggles” is finding something to do with leftover food, especially with the common left over items like rice and pasta. The other night I had two items on hand: left over wild ancient grain rice and fresh walleye from a fishing trip with my dad. So off to the kitchen I went and concocted this recipe. It was also a crowd pleaser even to the most difficult to impress (aka. our dad who calls everything we make “hippy food”, loved these cakes).

Goat Cheese & Chive Scrambled Eggs

After making Julia Child’s Rolled Omelette several weeks ago for the JC100 celebration, I’ve been using that high-heat method to cook my eggs ever since. It’s super quick and results in the amazing soft and creamy eggs. So one day as I’m making eggs, I happened to have goat cheese in my fridge and chives in my freezer (chives freeze great if you didn’t know!). Now I love the combination of eggs and chives, as well as goat cheese and chives, but it occurred to me that I had never put all three together. Fortunately that problem didn’t last long. Soon after, I was chowing down on the most delicious, creamy and flavourful scrambled eggs I have ever made! If you’re a goat cheese lover like me you NEED to make these!

Portobello Mushroom & Avocado Burger

I’ve been designing this burger in my head for a while and after running a 10km race this morning, I decided that it would be a great choice to make this healthy burger – you know, to stay with the healthy kick and all. It’s easy to make which is also a great choice. All together, the flavours really compliment each other – the portobello mushroom adds good depth and flavour, while the avocado adds a smooth buttery flavour. BBQ Pork Tenderloin

Okay BS’ers…. I have something to confess….I’ve never BBQ’d before. Yup, that’s right. Never turned on a BBQ, never put food on a BBQ, never turned off a BBQ. Yet have eaten tons of food cooked on a BBQ. Why you ask? That’s always been Bob or my Dad’s job. So welcome to my first adventure into BBQ’ing and I can promise that you will see more BBQ recipes as the summer progresses!

Deconstructed Guacamole Sandwich

After picking up an avocado at the grocery store, in hopes that I would do something cool with it, I had planned on making a toasted tomato sandwich with avocado on it. While that would have been a simple and tasty dish, it wasn’t very creative. Fortunately, inspiration struck courtesy of the ingredients in my fridge (red onion mainly!) and the Deconstructed Guacamole Sandwich was created! These tasted great and were super easy to make, perfect for a quick snack or a twist on the traditional guacamole appetizer at at party!

Sautéed Spinach & Turkey Sandwich

Initially I had no plans on posting this recipe and was just making it because I was hungry, but after I made it, cut it in half and tried a little piece that fell out, it was too delicious and beautiful not to post! Fortunately my camera was close by and I snapped a few quick pictures. This is a really simple recipe and a great way to take your regular old sandwich to the next level!

Roasted Jalapeno Egg Salad

This quick recipe came about as I was trying to make lunch for work, but had ran out of meat to make a sandwich, so I had to improvise something else! While my fridge was looking quite empty, I did have hard boiled eggs, so egg salad was a go!  In an effort to make this egg salad a little more interesting and blog worthy, I decided to add in some roasted jalapeno peppers which also happened to be in my fridge (from a failed Roasted Jalapeno Bacon & Brie Grilled Cheese – sounds like it could do no wrong but unfortunately didn’t taste as good as I was hoping :(  ). Fortunately these added jalapenos gave the egg salad a really nice extra kick of flavour and some heat too!
