I must say September was a pretty pitiful month for blogging and I apologize for that! It’s not that I haven’t been cooking anything, I just haven’t been taking the time to edit the images, and write up a blog post. Let’s start with this delicious meal featuring some wonderful ingredients from my mothers garden! The stars of the dish are delicious onions that have been drizzled with balsamic vinegar and roasted, as well as a hearty pork chop finished with chive butter. I have had visions of creating a salad in this style for quite some time and finally got around to actually doing it the other day! Along with fancying up the presentation of a watermelon salad, I wanted to try marinating watermelon and this was the perfect opportunity!

Initially I had plans to add some baby arugula into the dish, unfortunately when I went to the grocery store they were all out, so I just had to make do without it!

This salad really transforms the watermelon into a savoury dish that felt surprisingly hearty! Marinating the watermelon adds subtle hints of lemon, honey and balsamic to the freshness of the watermelon, and pairing it with the feta, mint, bacon and red onion makes it much more savoury. Topping it all of with a drizzle of balsamic vinegar gives it a bit of needed acidity and a nice tang!

I’m stepping out of my usual ooey gooey, melty grilled cheese territory with this one! It’s a veggie packed, crunchy, creamy grilled cheese, and it’s delicious! A traditional greek salad, in sandwich form! Since feta is a more solid cheese, you don’t get that stringy meltyness from it when it heats up, instead it retains it’s shape for the most part, but gets extra creamy, which is equally delicious and a nice change! I was slightly concerned about how well the cucumbers would hold up under the heat (soggy cucumbers are gross!), but they remained crunchy, taking on a more pickle like crunch, rather than the cucumbers usual fresh crunch.

Let this mark the beginning of our month long ode to the almighty Grilled Cheese! As part of National Grilled Cheese Month (possibly the best month ever), we are going to be posting a new grilled cheese EVERY DAY, yes you read that right! Every day tune-in to BS’ in the Kitchen and treat your visual tastebuds to some amazing new grilled cheeses (and THEY WILL be amazing!).

To start things off I present the Smoked Salmon Bagel Grilled Cheese, all the classic flavours of a smoked salmon bagel, with some Gruyere cheese, grilled to perfection! And when I say perfection, I mean it! This sandwich/bagel was amazing! I don’t even like smoked salmon that much, but it paired really well with the Gruyere cheese, I couldn’t get enough! You get the crisp exterior of the bagel, a smooth, creamy layer of cream cheese, a subtle bite from the red onion mixed in with the smokey, nutty flavour from the salmon and Gruyere. Then every couple of bites, there is a burst of pickled-vinegary flavour from the capers and a fresh bite of dill. The ingredients balanced each other so well and made for one unreal grilled cheese!
