My family has always been big on leftovers, and as a result I embrace the ability to re-purpose yesterdays meal into something new and delicious! More often than not, it’s something simple like a sandwich or quesadilla, but depending on what you’re left with you can make some pretty awesome meals! In this case, after a work related function, my mom was left with a bunch of roast beef and potatoes, which became this delicious twice baked potato!

Scouring my fridge for complementary ingredients, I found blue cheese and mushrooms, which goes great with both roast beef and potatoes! Combine all of those things together and you have a great side dish or appetizer for your dinner!

Thanks to my dad’s rigorous tournament fishing schedule every summer, my family did a LOT of camping, going nearly every weekend! As such, I have many fond memories growing up that revolve around our camping expeditions. Singing “Down by the Bay” as many times as possible to annoy Carlene, making every funny face I could think of while driving to annoy Carlene, “accidentally” crossing over “The Line” of the backseat to annoy Carlene… Okay so you get it, I spent a lot of time trying to annoy my sister!

Roasted Garlic

Consider this the prelude to my next recipe (Roasted Garlic, Spinach & Bacon Rangoon). This is actually the first time roasting garlic in the oven (typically I just saute a bit in a pan!), but it will definitely not be my last! It’s super easy, and not only does it give you some great tasting garlic, but you can also make garlic infused oil in the process!

Roasted Corn Guacamole

After working way too many hours this week, I’m finally getting some well deserved R & R this long weekend, at my girlfriends family’s gorgeous cabin in Columbia Lake, BC. Being so busy at work, I’ve been neglecting my blogging duties, and relaxing at a cabin goes hand in hand with having plenty to eat and drink, which just so happens to go hand in hand with a little blogging!

After a friendly neighbour brought over some delicious Taber corn (adding to the already abundant supply on hand), a corn related recipe was definitely in order! Having seen several variations of corn salsa online and in magazines, I decided it was time to whip up my own!

Corn Roasted Walleye

If anyone knows our family, they know we are big into fishing – specifically walleye. Our dad, the leader of the Deutscher pack, was a member of Team Canada for walleye fishing (yes, there is a team Canada…), Board for the Fishing for Tomorrow Foundation and the Saskatchewan Walleye Trail‘s Vice President, it’s safe to say we know how to fish. Anyways, my dad and I went fishing one day and caught some decent sized walleye.  I decided it was time to break away from the routine of the normal breaded and fried walleye and found this fabulous recipe and it was a new family hit! Spinach, Bacon & Goat Cheese Portobello Mushroom Sandwich

Let me start off by saying THIS SANDWICH IS AMAZING!! Seriously.  I didn’t know what I was in for when I made this creation, but i’m sooo glad I did! With this being the last of my mini portobello mushroom series, I will definitely be cooking with them more often. The combination of the creamy goat cheese, meaty portobello, sautéed spinach and smoky bacon all comes together so perfectly in this sandwich! Writing about it makes me want another one!
