Okay, I think everyone gets the point now that I’m basically addicted to soup… and if you really know me, you know I’ve been addicted to carrots my whole life! I even turned orange as a kid from the carotene in carrots… don’t believe me? Ask my mom. Maybe that’s why name is Carlene – close to Carotene…har har har 😉 So natural – to me – this soup is just fabulous!

I’ve really been into soup lately – most likely because of our -30 to -40 degree cold snap we’ve been getting. I was craving a good potato based soup so I came up with this creation after middling around with a few different recipes. Let’s make this a short post and get right to the point. In a large stock pot combine the following and let boil until the potatoes are tender and are ‘mashable':
I’ve been looking at a few roasted vegetable soups and been debating what to try and I settled on this hearty and healthy mix of veggies. So sit back, relax and enjoy a lovely cup of soup!
It seems like every holiday season and everytime the turkey comes out, we’ve always got some left over, so instantely turkey soup comes to mind. Now, we already have one recipe for Turkey Soup on the blog and I can guarentee there will be more. I don’t think soup is my strong point in my baking/cooking skills, so practice it is!
This version is hearty and perfect for a cold day when you need to warm up. The rice keeps it light and healthy and you can always add your own variety of veggies.

Today I bring you my Christmas present. Well one of them.
Carlene bought me some fancy black and white farfalle pasta (now pasta for Christmas would be like coal for some people, but I was excited!) for exclusive use with the blog and I finally got around to cooking it. I was really hungry and wasn’t sure how to use it, so I went for something quick and simple.

This is now the third version of dill pickle soup I have tried, first I made this Dill Pickle Soup, then I tried the Hoodoo Dill Pickle Soup, which was amazing but extremely high in fat and calories due to the fact that it’s basically just whipping cream with pickle brine in it. So for my third time, I attempted to find a healthy middle ground between the two versions, while still getting that nice rich flavour from the Hoodoo recipe.
