Over this summer, a good friend and I have been going out for evening trail rides every Friday. These are such a treat, nothing beats the relaxation of good friends, beautiful scenery of the Saskatchewan prairies and a horse. Before we head out, we eat dinner with her adorable little family. I recently made these for one of our rides and they were a hit! Easy, and tiny enough to fit perfectly in your hand (and just small enough for not feeling guilty if you have a second helping ) I’d imagine you could play around with the type of apples or the filling itself. All in all, these are a wonderful fall treat and would make a beautiful addition to any dessert table.

As many of you know I’m an avid bowhunter and now that September is here, hunting is in full swing. One of my favorite parts about hunting is being able to spend time with my “second” family, the Kuiack’s. After coming in for a visit, Heather (my other mom) sent me home with TONS of pickles from her garden and this fabulous recipe for sweet pickles that came from a neighbor of theirs. These pickles still have a slight crunch, a perfect sweet and vinegar-tart taste and would be great served with crackers and cheese or on your favourite sandwich.. During a recent trip to Toronto, I had delicious cereal crusted french toast for breakfast that left me inspired to create something similar! The french toast had a corn flake crust, giving it a crunchy, slightly sweet exterior, but rather than copying the recipe exactly, I went ahead and used Cinnamon Toast Crunch for my version!
This french toast was rich, crunchy, and sweet, perfect for those times you really want to spoil yourself for breakfast!

Strawberry, balsamic, basil & brie grilled cheese…Now that’s a mouthful! Literally!
Okay, i’ll be honest…I enjoyed this grilled cheese waaay more than I thought I would! I knew it would be good, but since i’m not usually the sweet, savoury type, I didn’t think it would be my favourite, but man was it good! Strawberry and reduced balsamic vinegar is already a great duo, now add brie and basil, and you have yourself one amazing grilled cheese! Sweet strawberries and reduced balsamic, savoury creamy brie cheese, with a fresh peppery bite of basil. Mmmmmmmmm.

After a perfect afternoon of ice fishing (okay well not perfect-perfect, because we didn’t even get a single bite and almost hit a deer with the truck – literally missing it by centimeters, but it was perfect in the sense that we got to spend some time enjoying the great Canadian outdoors)…. okay back on topic, after icing fishing, the Good Man and I headed home for a lovely prepared dinner thanks to our good friend, the slow cooker (aka. the crock pot). This recipe for pulled pork is sweet, savoury with a bit of a kick and most of all, the meat is tender and delicious! If you caught it a couple posts ago, you already know the genesis of this french toast idea, which came to be as I was fork deep in my Peanut Butter & Banana Stuffed French Toast. While many would wait and just make it the next day, there is no stifling french toast innovation in my kitchen! So with a belly full of Peanut Butter & Banana French Toast I went about (sluggishly) creating my second breakfast of the day! (Followed by a food coma and a subsequent trip to the gym!)

If you feel like indulging in an amazing, sweet, delicious and caloric breakfast this recipe is for you! Now I took the shortcut here and didn’t actually make the cinnamon buns since I live a block away from “Grounds for Coffee” which apparently has some of Vancouver’s best cinnamon buns, so I had to try them (they were delish!).
The idea of this breakfast was brought to my attention by my girlfriend Megan, who used to order this at Moxie’s years ago until they got rid of the recipe. So after lamenting about this amazing dish, we had to make it!
