This post is inspired by neglect! Specifically by two things I’ve been neglecting – blogging, and my poor little slow cooker, tucked away under the sink. I suppose it could also be about my neglect for cooking substantial meals, as of late. Not much has changed over the past several months, I’m still very busy, which is awesome! I’ve been doing some cooking, but not as much as normal, and just haven’t been able to dedicate time to blogging.

Thanks to all the food photography projects I’ve been working, my fridge has been seeing a constant flow of ingredients, and after a couple of photoshoots, it just so happened that I had all the makings of chili! The perfect thing to cook when you’re busy. Just toss it in the slow cooker, and let it go.

Here is some new news for all your BS’ers out there: I’ve started a new job in Communications in the world of potash! I work out at one of our mine sites, about forty minutes from my house, so the slow cooker has once again been my new favourite cooking appliance. It’s nice to come home to a warm cooked meal as soon as you step in the door and after a long day of work. I’m slightly addicted to Pinterest (no, that’s a lie. I’m addicted….) and I kept on seeing pins with cauliflower pizza crust, cauliflower bites, cauliflower imitating bread everywhere! Being new to collard greens, I am quite the fan, the large, hearty leaves make a great vegetable side dish, or a great vehicle for other ingredients! Although I kind of failed at this being a healthy recipe (see: bacon & cheese), using a collard green as a wrap instead of your typical tortilla style wrap, is a great low carb alternative! Of course if you want deprive yourself, you can take out the bacon and cheese, making it uber healthy! I say spoil yourself though, put the good stuff in!

Festive Chicken Noodle Soup (for the Marathon Runner’s Soul)
Recently our mother ran her first half marathon (woot! way to go mom!) and had some of her running friends for a carb & protein loading party the night before. A part of their dinner was Beer Butt Chicken, so we took the carcasses (shouldn’t there be a better word than that for a cooking blog? That word sounds so morbid) and made some soup. So just remember friends, when the world gives you chicken, make some chicken soup or should we settle for the quote by Lady Gaga “Once you kill a chicken, you gotta make some chicken soup.”
