Once again Bon Appetit is appealing to my taste buds with this recipe. Pork chops are a regular staple in my diet, I love acorn squash, AND simple recipes! Although I’ve never been a huge fan of cilantro, it was perfect in this recipe, really complimenting the flavour of the squash seeds, I actually found myself eating the extra seeds mixed with fresh chopped cilantro! As always, I made a few modifications to the recipe, cutting it down to a single serving, and using the acorn squash seeds instead of pumpkin seeds. It also said to shell the seeds, which I definitely was not going to take the time to do! Instead I left them whole and roughly chopped them as stated in the recipe, and it tasted great!

To go along with the Lemon Pepper Seared Tuna, I decided to try mustard greens and made this salad. The mustard greens are fairly bitter, so I paired it with a sweet lemon vinaigrette.

I made this salad a while back for my mom’s birthday after she had picked up several different ingredients from the farmer’s market and wanted me to construct a dinner for her! Some of those ingredients were beets, parmesan cheese and fresh berries, so I decided to go with a fresh and flavourful beet salad!

Cooking pork seemed like a flashback to our days of our Maple Leaf promo – so who wants to guess what kind of pork I used?? You’re right! Only the best – of course, Maple Leaf. These pork chops were great when crusted with the hummus and Cavender’s greek seasoning. The salad dressing was an excellent match as well as it provided a tart-fresh taste. But let’s get to the recipe.

I tasted this salad the other night while out for dinner at McNally Robinson’s restaraunt “Prairie Ink” (a great local place with great ambiance and occasionally vibrant live music) and decided that I had to try making it at home. After a quick trip to Sobey’s, I was armed with my ingredients and ready to recreate this delicious, fresh and light salad.

Another breakfast with Bob! Now this isn’t totally following the caprese dish, seeing as I had no basil, but I had to make do with what I had and this was the result! I was a little unsure about drizzling the balsamic olive oil vinaigrette on the egg sandwich, but i must say it was surprisingly good! Always remember to try new flavours, ingredients and what not, you never know what might surprise you! Here is what I did:
