Continuing my journey into pumpkin spiced everything, I present to you Pumpkin Spice Yogurt & Granola! Although this is more of a breakfast meal, I whipped it up late last night, thanks to midnight snack cravings… I was originally just going to have a little yogurt and granola, when I remembered I had a container of leftover Spiced Pumpkin Mix, from making homemade Pumpkin Spice Lattes. I figured it would probably be delicious in my little snack, so I tried it out, and sure enough it was! Good enough, that I made it again today for the blog!

I’ve been having the oatmeal cravings like mad lately. Perhaps it has something to do with the winter and feeling the need for a hearty/healthy breakfast, or maybe it’s because I keep seeing little mason jars filled with oatmeal and other wonderful things online? Just look at that beautiful little jar of goodness! I just want to dig my spoon in right now.

Thanks to my latest Tablespoon.com video project “How to Seed a Pomegranate”, I had an abundance of pomegranate seeds that needed to be used up and this seemed like the perfect opportunity!

As with most people, what I eat is often dictated by what I have left in my fridge. In this case it was Greek yogurt and blood oranges. Peeling the orange, and tossing them into a bowl, I sweetened it with some honey and added a drizzle of chocolate balsamic vinegar for some pizzazz, and had myself a wonderful breakfast!

Ice Cream Sandies

At work we recently hosted a bake sale to help out a fellow employee that was going through some challenging times within their family. The bake sale, 50/50 and donations all went to help this family out. As a new employee this really impressed me and showed how much the company truly is a ‘family’ – the most functional, dysfunctional family, but still a family. For the bake sale I made these yummy little homemade ice cream sandies (aka. sandwiches). Within one day of  fundraising we’ve raised approximately $2,500 for our fellow employee!
