Baked Egg Cups + GIVEAWAY

These Baked Egg Cups are perfect for a larger group, and can be easily customized to everyone's taste!
  • 6 slices of ham
  • 18 baby spinach leaves
  • 6 tsp crumbled goat cheese
  • 6 eggs
  • 6 tsp milk
  • 2 tsp finely chopped chives
  • ⅛ tsp black pepper
  1. Preheat oven to 350F.
  2. Spray bottoms and sides of a 6-cup muffin tin with cooking spray.
  3. Line inside of each muffin cup with ham.
  4. Place three spinach leaves over ham, then 1 teaspoon of goat cheese over spinach.
  5. Carefully crack an egg over top.
  6. Spoon 1 tsp of milk over each yolk.
  7. Sprinkle chives and pepper over top.
  8. Bake until whites are set, about 18-20 minutes.
  9. Run knife around inside of each muffin cup, then remove.
