  • 1 tablespoon olive oil
  • 2 handfuls of spinach
  • 1 tomato (chopped)
  • 100 g (1 serving) of uncooked spaghetti
  • 1½ cups of water (or broth)
  • salt & pepper
  • parmesan cheese
  1. In a pan on medium heat, add olive oil.
  2. Once pan is heated, add meatballs, cooking about 5 minutes allowing them to brown.
  3. Add chopped tomatoes and spinach, cooking for about 2 minutes.
  4. Add in pasta and water (or broth if you wish).
  5. Once water reaches a boil, turn heat to low and simmer with the lid on for about 20 minutes or until water reduces to form a light sauce. You could also add a splash of cream, or sour cream to the dish if you prefer a creamier sauce!
  6. Salt and pepper to taste.
  7. Garnish with plenty of parmesan!
