Citrus Marinated Chicken

- 5 chicken drumsticks
- 1 clove of garlic (minced)
- ½ cup packed cilantro
- ¼ cup chopped green onion
- ⅓ cup fresh grapefruit juice
- 2 tbsp concentrated orange juice (I used sunrype)
- ⅛ cup soya sauce
- ½ tbsp salt
- Combine all of the ingredients into a Ziploc bag, mixing around chicken, and allow to marinate for at least an hour.
- Once chicken has finished marinating, allow to sit at room temperature for about 20-30 minutes.
- Preheat your barbecue to medium heat for about 10-15 minutes.
- Once your grill has preheated, cook your chicken for about 15-20 minutes (or until its internal temperature reaches 165F).
- Rotate chicken approximately every five minutes, allowing it to cook evenly on all sides and give you delicious skin!
- Halfway through the cooking process, brush the leftover marinade on the chicken whenever you rotate it.
- Once chicken has finished cooking, remove from heat and allow it to rest for 10-15 minutes.
- Serve with rice and a sprinkle of chopped green onion!
