Cherry Scones with Saskatchewan Sour Cherries

An easy recipe for buttermilk scones using fresh cherries or any fruit of your choice.
  • 3 cups flour
  • 2 tbsp baking powder
  • ¼ tsp salt
  • ⅓ cup butter (chilled or frozen)
  • 1¼ cup buttermilk
  • 2 cups cherries (pitted and drained)
  • GLAZE 1 cup icing sugar
  • GLAZE 2-3 tbsp milk
  • GLAZE 1-2 tsp almond extract
  1. Preheat your oven to 425°F and line a cookie sheet with parchment paper.
  2. In a large bowl, mix together your dry ingredients.
  3. Using a cheese grater, grate in your butter (this is a great cheat instead of crumbling in your butter). Toss until all the butter is coated with flour.
  4. Gently toss your fruit in a tbsp of flour.
  5. Toss in your fruit into the flour and butter mixture, pour in your buttermilk and knead until a nice dough forms.
  6. Form the dough into a circle shape that is roughly 2-3 inches thick, cut into pie shape wedges.
  7. Transfer each wedge onto the cookie sheet and space the wedges apart to allow them to rise.
  8. Bake in 425°F oven for 10-15 minutes.
  9. Mix your glaze to desired consistency and taste, once the scones are done, let cool for 2-3 minutes, drizzle with glaze and serve
