Spinach & Mushroom Scrambled Egg Wrap

Lately I’ve been enjoying quite a few scrambled egg wraps, being that they are so easy to make and they taste awesome! I’ve been trying them with quite a few different ingredients (salsa, feta cheese, olives, spinach, etc.), so you may see a couple more of these in the near future, but right now I will share my most recent creation!

Spinach & Mushroom Scrambled Egg Wrap

  • 4 White Mushrooms
  • ½ Clove of Garlic
  • 2 Eggs
  • 1-2 Handfuls of Spinach
  • Salt & Pepper
  • Cheddar Cheese
  • 1 Soft Tortilla Shell (I used spinach flavour)
  • 1-2 Tbsp Sour Cream
  • Butter

Start things off by slicing up some garlic and mushrooms. While you do this, get a pan with some butter in it started on medium heat, mixing in the mushrooms and garlic once it has heated for a few minutes. While your mushrooms are cooking, scramble your eggs in a bowl, then move the mushrooms to one side of the pan, add a little butter to the opposite side and pour your eggs in.

Once your eggs begin to cook, add in one or two handfuls of spinach and mix everything around. Salt and pepper everything to your liking and cook until the spinach is wilted. Place some slices of cheddar cheese in the middle of your tortilla, top it with your egg scramble, finishing it off with one to two tablespoons of sour cream and wrap it all up!
