In a pan on medium-low heat, add a light coating of olive oil.
While pan is heating, brush the outside of both slices of bread with olive oil (a flavoured olive oil like basil, or garlic goes great on this sandwich!),
Spread 1 tablespoon of pizza sauce on the inside of each slice of bread, top the bottom slice with 2-4 pieces of fresh mozzarella, fresh basil, a sprinkle of garlic power, and the top slice of bread.
Place in pan, cooking until bread is golden brown and cheese is melted. Add more olive oil if needed.
