It seems like I’m getting to that age where a lot of my good friends are getting engaged – wait, does this mean I’m getting old?? Ekkk… Let’s hope not. Anyways, one of my best friends (let’s call her Maddog) is planning her wedding for August of 2012 and we were discussing wedding cakes. Her and her fiance were interested in making their own wedding cake, so I came up this cake: A Vanilla Cake & Amaretto Cake with a Rich Vanilla Bean Buttercream. So let’s get to this recipe which is easy enough for anyone to make their own wedding cake or cupcakes….
Cake
- 1 Box of White Cake Mix
- 3 Eggs
- 1/2 cup Melted Butter
- 1 cup Water

Rich Vanilla Bean Buttercream
- 1/2 cup softened butter
- 4-5 cups icing sugar
- 2 tbsp whipping cream
- 3 tsp vanilla extract
- 1 tsp Wilton butter flavouring
- 2 vanilla bean pods (scrapped & just use the beans)
Mix the above ingredients and taste as you go along, adding more icing sugar to stiffen the icing, or more flavouring that you like.
Once the cakes are completely cool, stack on top of each other and shape into uniform circles – you may need to shape the tops and the sides. Once cut, start icing by icing the middles and stacking; then move to the sides.
After the cake is iced, decorating using a large ribbon. Wait for some friends then sample away!!
