It seems as though I’m having a bit of a moment with pumpkin these days…Fortunately, this post moves away from “pumpkin spice” and features a different spice.

Butternut Squash Soup with Sage Cream

Butternut Squash Soup with Sage Cream | bsinthekitchen.com #butternutsquash #soup #bsinthekitchen

Squash season is upon us! Unfortunately along with squash comes fall (which is beautiful), but it means winter is that much closer, and that means freezing cold weather! Fortunately, we have recipes to remedy that, like this delicious soup recipe from the always reliable Bon Appetit.

Butternut Squash & Thyme Tart

Butternut Squash & Thyme Tart | bsinthekitchen.com #butternutsquash #dessert #bsinthekitchen

This dessert makes me happy because, well it’s dessert, and dessert is delicious! But on the other hand, it makes me sad, because Celeste, one of my old room-mates made it, and now she is on a cross country road trip to Newfoundland with her fiancée (and my other room-mate) Ross, which means they no longer live in Saskatoon with me! Sadness :( On the positive side, she is blogging their whole adventure on Sugar Cured, if you love food, travel, and cursing, definitely check it out!

Winter Squash Fettuccine

Winter Squash Fettuccine | bsinthekitchen.com #dinner #pasta #bsinthekitchen

I could say I feel bad about how many squash recipes I have posted over the last several months, but that would be a lie. I don’t feel bad. Squash is delicious! With that proclamation, I give you another recipe with squash in it. Once again, the February issue of Bon Appetit is pulling through big time, this is now the third delicious recipe I have made from it! Perhaps I should become a recipe tester for them?

Anyways, back to the recipe. After looking through the magazine, this one caught my eye, so I made a mental note to try it out. When I ended up with leftover butternut squash puree in my fridge a few days later, I knew this would be the perfect opportunity to use it!

Winter Squash Salad

Winter Squash Salad | bsinthekitchen.com #salad #squash #bsinthekitchen

Typically in winter I crave warm, hearty comfort foods like many others, but for whatever reason, this time I was really craving a salad. Given how cold and snowy it was outside, I figured, why not make this a comforting “winter” salad! With “wintery” ingredients already on hand, like kale and acorn squash, I knew I could whip something tasty up, so away I went.

Zucchini Pepperoni Pizzas

Zucchinis…you either love or hate them…or rather, you love them but then hate them because you have so many at the end of the gardening season that you can’t possibly fathom eating another one of those massive green squashes.

Yeah that sounds about right.

Spaghetti Squash & Meat Sauce

Spaghetti Squash & Meat Sauce | bsinthekitchen.com #healthy #dinner #bsinthekitchen

Here is a recipe that just makes sense! Taking traditional spaghetti and meat sauce, but swapping the pasta for squash. I apologize in advance to those who like very specific recipes. I made meat sauce the previous night and used the leftover sauce when making this, so i’m estimating the measurements, but hey! It’s a meat sauce. If you are measuring everything you’re doing it wrong! It’s all about adding in the main component, adding a dash of this, a dash of that, tasting, adjusting, and enjoying!

Spinach, Tomato & Goat Cheese Stuffed Spaghetti Squash

Spinach, Tomato & Goat Cheese Stuffed Spaghetti Squash | bsinthekitchen.com #squash #healthy #bsinthekitchen

It’s that time of the year… Squash season!

Thanks to my mother planting copious amount of spaghetti squash this year, I have been racking my brain, trying to think of different ways to use that delicious vegetable! In the past, I have always kept it quite simple, roasting the spaghetti squash, then mixing in some diced tomato and onion, which makes a perfectly delicious meal. But this time I wanted to really take advantage of the squash and the fact that it makes a perfect little boat for other ingredients when cut in half.

Pork Chop & Acorn Squash with Squash Seed Vinaigrette

Pork Chop & Acorn Squash with Squash Seed Vinaigrette | bsinthekitchen.com #dinner #pork #bsinthekitchen

Once again Bon Appetit is appealing to my taste buds with this recipe. Pork chops are a regular staple in my diet, I love acorn squash, AND simple recipes! Although I’ve never been a huge fan of cilantro, it was perfect in this recipe, really complimenting the flavour of the squash seeds, I actually found myself eating the extra seeds mixed with fresh chopped cilantro! As always, I made a few modifications to the recipe, cutting it down to a single serving, and using the acorn squash seeds instead of pumpkin seeds. It also said to shell the seeds, which I definitely was not going to take the time to do! Instead I left them whole and roughly chopped them as stated in the recipe, and it tasted great!
